Most things that take time in life turn out to be worth it. Finding the right person to settle down with, building or buying your first home, buying your first car - the list could go on and on.
Each summer we brew a batch of our imperial stout, knowing it’s not going to be ready until winter arrives. That batch gets to sit on our bourbon infused oak for months, adding to the richness and complexity that began back in the summer. The result, which is talked about with anticipation for months before ever getting tasted, is well worth the wait.
So while our process of finding the right location and getting all set up to open our little brewery is taking time, if our bourbon barrel stout is any indication of our process, it’ll be well worth the wait.
