I always get stressed when I have friends over for dinner or when I’m invited to a potluck-style meal. What do I bring? How do I make a meal for more than just me that is low-waste and also tastes good?
This veggie quinoa bake was the best thing. If you have a few go-to meals, it will make life easier and alleviate a lot of the “will I say yes to this time in community or no because I’m stressed about the food” anxiety.
Ingredients: 1 c. white quinoa from bulk bin, 2 zucchini, 2 yellow squash, 1/2 red pepper, 1/2 orange pepper, 2 cobs of corn (boil and cut kernels off cob so you don’t have to use canned corn), tomatoes (Roma rather than cherry, to prevent packaging), rosemary (from my church’s garden— you could use whatever spices you want/prefer)
All I did was sautéed the veggies, cooked the quinoa, and then combined the two & refrigerated overnight. The next day after work, I added the rosemary and popped it in the oven to warm it up for 20 minutes at 425 degrees. SO EASY. SO GOOD.
