🍄 Creamy Mushroom and Spinach Pasta 📷 by @theplantifulchef 🚨🚨Recipe: 160-200g gf pasta (serves 2) 150 mushrooms 2 garlic cloves 1 shallot or small white onion 1-2tsp nutritional yeast 1/2cup dairy free cream 1/2cup veggie stock 2 large handfuls of spinach First off get everything prepared, garlic, onion and mushrooms chopped ready you can replace this with garlic and onion powder if your really short on time. Get your pasta on to boil and have a pan heating for the sauce with a little spray of oil (optional). Fry off onion, garlic and mushrooms for 5 minutes over medium heat. @theplantifulchef reserved some of the fried mushrooms for sprinkling on top (optional) At the 5 minute mark add in cream, stock and nutritional yeast. Bubble until it thickens, reduce heat. Once pasta is ready add into sauce and coat, add in spinach and stir in the sauce until it wilts. Its now ready to serve and enjoy. VEGAN POTSTICKERS 🥟 🥟 Tofu bokchoy potstickers by @woon.heng . Recipe: • 1/2 block of firm tofu, drained and pat dry and cut into small cubes • 8 caps of Chinese mushrooms, soaked until soft, chopped • 2 tsp black bean sauce (substitute with 2 tsp soy sauce + 1/2 tsp maple syrup) • 1lb bok choy, washed and julienned into thin strips • 1 package of dumpling wrapper • sesame oil • salt and pepper to taste . DIRECTIONS: Place julienned bok choy in a large bowl with 1/2 tsp salt, using your hands, gently fold all the veggies together. Set aside for 15-20mins. . In a heated pan with 1 tsp oil, saute mushrooms until lightly brown, add black bean sauce and stir until well combined, set aside and pan fry tofu cubes until lightly brown. Place both ingredients in a big bowl. Using a cheesecloth or just with your palms, squeeze as much liquid out as possible from your bok choy. Add to your tofu mixture, combine well & season. . Place a dollop of mixture in the middle of your wrapper, moisten side with water and pleat to seal. Repeat until you are done with your mixture and then pan fry them. . In a heated pan with oil, place dumpling, bottom side down and cook until brownish, then add enough boiling water to cover part of the dumpling, cover lid. EGAN BLUE SPIRULINA PANCAKES - Ingredients ♡ 200 g all purpose flour ♡ 1+1/2 tbsp baking powder ♡ 2 tbsp coconut sugar ♡ 1 tbsp @rawnice blue spirulina powder ♡ 360 ml milk of choice ♡ 1+1/2 tbsp apple cider vinegar ♡ some blueberries (optional, but I used them) . Mix milk and vinegar and let the mixture sit for 5 minutes. In a large bowl mix together flour, baking powder, sugar and spirulina powder. Pour liquids over dry, mix well and let your pancake batter sit for 5 minutes. Heat up a non stick pan and start cooking your pancakes on low heat for about 1 minute per side (if you want and have them on hand, sprinkle some blueberries on top of each pancake while it's still cooking on the first side 😊). . . . Vegan Sausage and Pesto Ricotta Manicotti by 📸 @rabbitandwolves via @vegangotgame #vegangotgame 💛 Recipe Ingredients Tofu Pesto Ricotta 1/2 a Block (about 8oz.) Extra firm tofu 2 Tbsp. Nutritional yeast 2 tsp. Olive oil 2 Tbsp. Lemon juice, about 2 small lemons 2 Cloves of Garlic 1/3 C. Basil, fresh 2 Tbsp. Pine nuts or walnuts 1 tsp. Salt 1/4 tsp. Black pepper Tempeh Sausage 8 oz. Tempeh 1 Tbsp. Olive oil 1 tsp. Basil, dried 1 tsp. Garlic powder 1/2 tsp. Oregano 1/2 tsp. Paprika 1/2 tsp. Salt 1/4 tsp. Black pepper For the Manicotti 1/2 a Box Manicotti noodles, 7 noodles 1 1/2 C. Marinara sauce Vegan Mozzarella for topping, optional Instructions First, make the pesto ricotta. Squeeze the tofu over the sink squeezing as much liquid out as possible. If it starts to crumble it's no problem, you will be blending it. Then, add all the ricotta ingredients to a food processor. Pulse, scraping down the sides as needed until everything comes together, but still has some texture and looks ricotta like. Set aside. Now, begin boiling water for the manicotti. Once it is boiling, cook according to package instructions. This will be enough filling for about half the box(7). While the manicotti is boiling, make the tempeh sausage. Heat the olive oil in a non stick skillet on medium high. Then, crumble the block of tempeh into the pan. Break up any really large pieces so it looks like sausage crumbles. Saute, reducing heat as needed, for 4-5 minutes until the tempeh starts to brown. Then stir in all the seasonings. Toss to coat. Saute for another minute or so, making sure the tempeh is browned all around. Remove from heat. Preheat the oven 400 degrees. Once you have drained the manicotti, let them cool for a few minutes so you can handle them. While you wait, add the pesto ricotta and sausage to a mixing bowl, and stir to combine(if you want you can leave a little bit of sausage out to sprinkle on top). Then, pour about half of the marinara sauce into the bottom of a baking dish. Recipe continued below in comments! Enjoy!

One pot pasta for dinner! 🍝Healthy, tasty, and minimal washing up 💃 Just chuck in all your chopped ingredients (I went for red onion, baby peppers, tomatoes, green beans, courgette & butternut squash noodles) as well as some chopped garlic, a handful of basil, a tbsp of tomato purée, capers, olive oil, black pepper, salt and, obviously, spaghetti. I also added a couple of tbsps of nutritional yeast (not pictured) to give it a more 🧀 flavour! Then add boiling water (just enough to cover your ingredients, you can always add more if needed - you want just enough to make a yummy sauce, but not so much you need to drain it and lose any of the flavour). Turmeric tofu chow mein 🥘 Messy but yum!! Apologies for the half eaten meal... but thought I would share :) Tofu is a great source of protein. We prepare it by setting something heavy on fresh tofu for about 30 mins prior to cooking. Then to make it a bit harder you can boil it for two minutes before you start to make your meal. This is how we do it but everyone has their go to method. 😊 I used a pinch of turmeric, salt and pepper and stir fried the tofu in oil. I added some straight to wok noodles and chow mein sauce! Normally I would pack this with veggies.. but it’s grocery day and we haven’t stocked up yet! I’d recommend onion, garlic, spinach and perhaps some bean sprouts 😋 there is probably around 30-40g protein in the tofu alone.. depending how much you use. I eat a mound of this. Back stateside I thought I would take this opportunity to share my vegan journey. . As far back as I can remember, I never liked the taste of meat. It would sit in my mouth and with every bite my brain knew something wasn't right - my teeth grinding apart the flesh of an animal that I actually liked. When I was seven, my big sister gave up meat after reading a horror story about the conditions on chicken farms. I didn't even know not eating meat was an option but I followed right away. Thankfully my parents let me make my own decisions but were highly concerned about my nutrition while growing. They did what any parent would do, seek advice from a doctor - who as we know now, did not get a ton of nutritional education. The doctor told me that I need to find protein in other places, specifically to increase my dairy intake. Doctor's orders: off I went to become a very sick, bloated, constipated, lethargic, tired child, teenager and young adult. About 7 years ago I got fed up - I knew this couldn't be my life. I started doing my own research which led me down a rabbit hole of information - leading to the benefits of being vegan for the animals and the planet. I knew I had to change my life radically and here I am. My energy levels have sky rocketed, my health results are better than ever, I can go regularly, and I barely get sick. . What are your stories? Marinando tofu para los burritos de esta noche. 👉🏻250g de Tofu; Zumo de 1 Lima; 1 CS de AOVE; Una pizca de Sal ( yo he puesto sal rosa del Himalaya ); hierbas provenzales al gusto. Puedes añadir ajo en polvo, cebolla en polvo, etc... Mezclar todo junto con el Tofu cortado al gusto ( yo lo he cortado esta vez a tiras). Dejar marinar mínimo 30’ y luego hacer a la plancha. Marinading tofu for the burritos tonight. 👉 250g of Tofu; 1 lime juice; 1 tbsp of EVOO; A pinch of salt (I have put pink salt from the Himalayas); Provencal herbs to taste. You can add garlic powder, onion powder, etc ... Mix everything together with the Tofu cut to taste (I cut it this time to strips). I usually just use Bisquick when I want to make plain pancakes or waffles, but my daughter makes them often and we go through it pretty fast, and it’s not terribly cheap. So I have decided that we are now making them from scratch. When I moved away from home, I loved cracking open a can of Campbell’s cream of mushroom soup. It took five minutes to throw into a pot with water or milk and it always brought me so much comfort. Did you know that one serving has 650 mg of sodium? Also, the flavour contains chicken! I had no idea it wasn’t vegetarian! Anyway, I am so happy I came across this recipe. It tastes better than the cream of mushroom soup of my younger days and the ingredients are clean clean clean. The seasoning is simple and the coconut milk gives it a silky smooth, rich flavour. It also didn’t take much more time than opening up a can! Believe it or not there IS lettuce under there 👀 My only class today was cancelled so instead of eating lunch in the library, I got to come home after going to the gym. Some cosmic force brought this day off to me; I lost a lot of sleep doing classwork this week and I think the universe was looking out for my sanity 😩 The best part of this salad was the carrot meat crumbles😍 I chopped carrot and onion in the food processor and crisped it up in a pan before adding garlic, pepper, paprika, sage, and thyme. Then I mixed in a little bit of bbq sauce and let it dry out in the oven for a bit while the sweet potatoes were roasting. VEGAN STAPLES - L for Lentils ⠀⠀ I love lentils! They are so versatile and full of nutrients such as iron, B vitamins, zinc, magnesium and of course plant protein! 🌱 ⠀⠀ You can use lentils to make lentils lasagna, a lentil bolognese sauce, lentil spread, lentil soup, lentil stews, lentil burgers, lentil curry/dal... So many options! ☺️ Lately I’ve been making a lot of lentil patties. They are so easy to make, hold their shape perfectly, crispy on the outside and chewy on the inside. ⠀⠀ Lentil patties (or lentil balls) - 1 cup red lentils - 1 onion - 1 jalapeño (optional) - 1/2 tsp cumin seeds - 1 tsp paprika - 1 cup diced vegetables (carrots, bell peppers, corn..) - 1 cup finely cut oats - your choice of herbs, fresh or frozen (like parsley or cilantro) ⠀⠀ Cook the lentils with 2 cups of vegetable stock for 10-15 minutes until they have soaked up all the liquid. The lentils should be very soft and almost fall apart so that you can mash them with a spoon. In the meantime dice the onion. Remove the seeds from the jalapeño and dice as well. Sauté with the spices for a couple minutes, then add the cut vegetables and a splash of water and cook for 10 minutes until soft. Add veggies to a food processor and pulse a couple of times (a few small chunks are totally fine). If you don’t have finely cut oats, you can use rolled oats and blend to make oatmeal. Mix the mashed lentils, purées veggies and oats plus the herbs. This recipe will make roughly 12 patties or 24 balls. Bake them at 200C for 15 minutes, then flip and bake for another 10 minutes. Shroomdogs gravy and mash 🌿 Thank you @sainsburys for sending me your tasty Shroomdogs. These mini sausages with gravy and mash make the most comforting meal 🌿 Recipe For mash: Potato: 1 boiled and peeled @followyourheart vegenaise: 1T Oat milk: ½ C warm Vegan butter: 1T Salt to taste Method: Mash all ingredients using a hand held blender till smooth 🌿 For gravy Vegan butter: 2 T Corn flour: 3T Vegetable stock: 3C liquid aminos: 3T Dried thyme: 2T Pepper: 2t Salt to taste Method: Heat vegan butter in a pan on a low heat. When butter melts add cornflour and cook whisking for 3-4 minutes till bubbles firm Add vegetable stock bit by bit whisking constantly to avoid lumps Add the remaining ingredients and continue cooking for 3-4 minutes more constantly whisking to avoid lumps. Add more water if required Pass gravy through sieve for smooth texture

SIMPLE BEAN TACOS (serves 2) For the beans - 1can (230g drained) black beans - 1 tbsp cumin, ground - 1 tsp smoked paprika powder For the avo mash - 1 avocado - 1 tbsp lime juice - 1 pinch pepper, ground For serving - 4 whole wheat or corn tortillas - Coriander - Chili - Corn kernels . STEPS 1. Mash avocado in a bowl together with spices and lime, set aside 2. The hedgehog bread rolls were a little scary looking, but using the wholemeal flour didn’t make them too dense at all, I actually didn’t cock up the kids bread rolls yay!! COCONUT CHIA PUDDING Yesterday we figured out a tasty way to get in a good dose of greens at breakfast, and today it’s omega 3s we’re tackling. Up until this morning I had never had chia pudding and I was convinced I would never like it. Well, turns out I was wrong, because this recipe is a keeper. So, if you are yet to give chia pudding a shot, too, give this recipe a chance and let me know what you think. Deal? Serves 3 Ingredients: • 6 Tbsp chia seeds • 1 1/2 C plant milk (I used soy) • 3/4 C coconut milk • 1 Tbsp liquid sweetener, + more to taste (I opted for agave syrup as it doesn’t have as much of an intrinsic flavor as maple syrup does) Instructions: 1. Add all ingredients to a bowl and stir well. 2. Once everything is thoroughly combined, refrigerate overnight. 3. In the morning transfer the pudding to three glasses or bowls and top with whatever your heart desires. 4. Enjoy!

Hello friends, as promised I’m coming at you today with one amazing CHOCOLATE CHUNK BANANA CAKE recipe. So I hope you’re excited and hungry, because it’s a good one. Serve it with some coconut whipped cream, yoghurt or ice cream and enjoy with your friends and family ❤️ Serves 9 Ingredients: • 1 1/3 C (120g) whole grain spelt flour* • 2/3 C (75g) almond meal • 2 tsp baking powder • Pinch of salt • 4 large, ripe bananas (400g) • 1 tsp vanilla paste (optional) • 2 Tbsp liquid sweetener ** (you may add another 1-2 Tbsp for a sweeter cake) • 1/4 C (70g) almond butter • 70g dark chocolate, roughly chopped + more for topping Instructions: 1. Begin by spraying a 20x20cm baking pan with nonstick spray and preheating the oven to 180 degrees Celsius. 2. In a large bowl combine spelt flour, almond meal, baking powder and salt. Stir thoroughly. 3. To a food processor add your bananas, vanilla paste (if using), agave syrup and almond butter. Blend until you get an even mixture. 4. Pour the mixture into the bowl with the dry ingredients and stir well. 5. Fold in the chocolate chunks. 6. Transfer the batter to the baking pan and sprinkle with more chocolate chunks. 7. Bake for 30 minutes and let fully cool in the pan. 8. Enjoy! *You may try other flours, but I am yet to do so myself, so I cannot guarantee anything. ** I used agave syrup, but I’m quite confident maple syrup or honey (if not vegan) would work just as well.

If you’re anything like myself and sometimes struggle to get your greens in, this one is for YOU! This morning, I tried something very unconventional and let me tell you the result was not bad. Not bad at all. Which is why I’m now coming at you with this cool bowl of oatmeal. Monster oatmeal, if you may, or, less creative, CINNAMON SPINACH OATMEAL. Are you in? Let’s do this. Serves 2 Ingredients: • 2/3 C rolled oats • 2 C water • A couple handfuls of spinach (I used around 120g) • Pinch of salt • 1 tsp cinnamon (or more if you prefer an even more cinnamon-y oatmeal) • 2 Tbsp sweetener (I used maple syrup, but I reckon agave syrup, honey, or even sugar would work just as well) Instructions: 1. Begin by adding water and spinach to a blender. 2. Blend on high till you get an even mixture. 3. To a pot add the rolled oats, spinach mixture, salt, sweetener and cinnamon, and stir well. 4. Bring to a boil over medium-high heat. 5. Once boiling, stir well and reduce heat to medium-low. 6. Cook, stirring frequently, until you reach desired consistency. 7. Transfer oatmeal to two bowls, add toppings of choice and enjoy!

Good morning friends 🌞 As promised, I kicked my behind into gear earlier on and tweaked the other day’s oatmeal, which is why I’m happy to finally be able to share the recipe for this delicious bowl of PROTEIN CARROT CAKE OATMEAL with you. I hope you like it as much as I do! Serves 2 small or 1 large portion Ingredients: • 2/3 C rolled oats • 1/2 C finely grated carrot • 1 - 1 1/2 tsp ground cinnamon, depending on how cinnamon-y you like it • 1/4 tsp ground ginger • Dash of ground nutmeg, to taste • 1 1/3 Tbsp coconut sugar * , or more if you prefer a sweeter oatmeal • Pinch of salt • 2 C water • 1 heaping Tbsp unflavored protein powder of choice (optional) Instructions: 1. Add all ingredients, apart from the protein powder, if using, to a saucepan, stir well, and bring to a boil over medium-high heat. 2. Once boiling, reduce heat to medium-low. 3. Cook, stirring frequently, until you reach desired consistency. If making protein oatmeal, cook until just under desired consistency, then remove from heat and stir in protein powder. 4. Top with whatever your heart desires. 5. Dig in! *While I haven’t tried it, you may try substituting the coconut sugar with 1 Tbsp regular sugar or 1 Tbsp maple syrup

HEALTHY, REFINED SUGAR FREE, NO BAKE BROWNIE BLISS BALLS. These balls make for a perfect snack or topping for ice cream, yoghurt, smoothie bowls, oatmeal, and much much more. They’re high in fiber, magnesium, potassium, antioxidants, vitamin E, B, C etc. and high up on the “yumm-scale”. On top of that they’re ready in just 5 - 10 minutes, so you have no excuse not to make them. Let me know if you try them and don’t forget to tag me - I’d love to see your creations! Serves 12 (each approximately 1 Tbsp) balls Ingredients: • 150g pitted dates • 5 Tbsp rolled or quick cooking oats • 1 1/2 Tbsp almond butter • 2 Tbsp cacao powder (I used raw cacao powder for greater health benefits) Instructions: 1. Add all ingredients to a food processor. 2. Process until you get a fine, crumbly and sticky mass. 3. Pour contents into a bowl and scoop out about 1 Tbsp of the mixture at a time, pressing it together and rolling it into a ball with the palms of your hands. 4. Repeat until you have used up all of the mixture and are left with about 12 balls (unless of course you fancy larger or smaller ones) 5. Devour!

Hi, I’m coming at you once more today, and this time I’ve got a bomb recipe for you. Ever had sweet potato bread? Well, if not, now’s the time. It’s healthy, sweet, moist, absolutely delicious, and all you need is 6 simple ingredients! Sounds good? Good. One last note though, if you want a higher, more bread shaped loaf, I recommend doubling the recipe, OR stuffing half your loaf pan with aluminium/cooking foil and lining the other half with baking paper. Alright, let’s get to it: Ingredients: • 2 medium Sweet potatoes (around 400g) • 1 C Whole grain spelt flour (I am yet to try other flours, and will let you know when I do) • 2 tsp Baking powder • Pinch of salt • 2 Tbsp Maple syrup • 1/3 C Almond butter Instructions: 1. Begin by heating your oven to 200 degrees Celcius and washing and drying your sweet potatoes. Then halve them lengthwise and place on a baking tray with baking paper, cut side down. 2. Bake the sweet potatoes until they begin to seep and release their juices, about 30 minutes. 3. In the meantime, in a large mixing bowl, combine flour, salt and baking powder. 4. Once the sweet potatoes are done, remove them from the oven, reduce heat to 180 degrees, and let the potatoes cool slightly, before cutting into thirds and transferring to a blender or food processor. The sweet potatoes should weigh about 360g. 5. Blend until smooth, then add maple syrup and almond butter and blend again. 6. Add the sweet potato, maple syrup, almond butter mixture to the dry ingredients and stir to combine thoroughly. 7. Spray a loaf pan with cooking spray (or see note above for a “half-pan version”)and pour in the batter. 8. Bake for 40 minutes, or until the top is slightly browned and a stick inserted comes out clean. 9. Once done, remove from the oven, cool in the pan for 5 minutes, and finally transfer to a cooling rack to cool fully. 10. Eat as is or top with peanut butter and jelly (or whatever floats your boat) for a prefect breakfast or snack. Enjoy! And don’t forget to tag me if you give this recipe a go.
