golden oatmeal | banana, blood orange, cacao nibs, coconut flakes, hemp seed, almond milk
i made this turmeric-spiced oatmeal inspired by golden milk: toasted the dry rolled oats and spices in the pan first, then added plant-based milk, a bit of vanilla extract and maple syrup, and simmered it on the stove for a few minutes until thick and creamy. it’s so fragrant (wish you could smell it) and wonderfully nourishing too!
i’m currently sick in bed (woke up with a cold this morning— i think my body finally decided it had enough) but i’ll be relishing the rest and trying not to think of everything i need to get done...

* ½ tsp coconut oil
* ½ cup rolled oats
* ½ tsp ground turmeric
* ¼ tsp ground ginger
* ¼ tsp ground cinnamon
* pinch of black pepper (helps the absorption of turmeric)
* pinch of salt
* 1 cup non-dairy milk
* 1 tsp maple syrup
* ¼ tsp vanilla extract
Melt coconut oil in a small pot over medium heat, then add the spices and stir for 30 seconds. Add in oats and toast for 2 more minutes. Add in non-dairy milk, vanilla, and maple syrup, and stir occasionally, allowing to reach to a boil. Reduce to a simmer and stir for 1 minute, then cover with lid, turn off heat, and let oats stand for 5 minutes to cook. Serve topped with fresh fruit, more milk, and nut butter.
