Thai Coconut Curry Ramen with Black Rice Ramen Noodles, mushrooms and lotus root by @naturallyzuzu 🍜 So delicious! Who'd love a bowl of this? . Thai Coconut Curry Ramen Yields 2-3 1 tbsp vegan Red Curry Paste (found in most Asian stores) 2 small green Thai chilies, or substitute with 1 jalapeno pepper 1 shallot OR 1/3 purple onion, diced (plus more for garnish) 2 cloves garlic, minced 2 thumb-size ginger, grated 1 stalk fresh lemon grass, minced OR 3 Tbsp. frozen or store bought paste. 2 Tbsp. Tamari soy sauce or coconut amino acids 2 tsp. Pure maple syrup 3 Tbsp. lime or lemon juice salt to taste 1 cup oyster mushrooms or any other mushrooms. 5-6 slices of lotus root 1 can organic coconut milk (or light coconut milk) 1 1/2 cup vegetable broth 3-4 kaffir lime leaves 1 package fresh Japanese ramen OR substitute dried ramen Generous handful fresh cilantro, Thai basil washed and dried ​. ​Method: Place a large pot over medium-high heat. Add the 1/2 cup of vegetable broth, then add curry paste, chiles, shallots, garlic, ginger and lemon grass and diced onion. Cook until vegetables and curry paste softened about 5 min. Add coconut milk and the remaining vegetable broth. Bring curry to a boil and reduce to a slight simmer. Add the lotus roots, mushrooms, kafir lime leaves, maple syrup. Cover and allow to simmer for about 5-8 min. Meanwhile bring a medium pot of water to a boil. This will be your cooking water for the ramen. Place ramen into boiling water and loosen the noodles, making sure they are evenly distributed. Cook until al dente, drain and rinse under cold water. Set aside. Add Salt to taste and adjust flavors to your liking - adding more tamari sauce to make it saltier, more maple syrup for sweetness, lime for acid and if it's too spicy you can temper it with more coconut milk. Where are you from and where do you live? I never really asked you guys this before so I’d love to know. I was born and raised in the Philippines 🇵🇭 and still currently residing here in Metro Manila. I’m of Chinese descent so I grew up with both Chinese and Filipino influences, which I guess reflects a lot in my food 🥢🍚 _ There’s a whole section of Filipino recipes over in my Vegan Kitchen #TFTFeBook and all of them are really close to my heart. Kiampung is a glutinous rice casserole and my family’s version is usually cooked with some shiitake mushrooms, carrots, and peachy tagalog or bokchoy. _ 2️⃣ Tofu and Mushroom Sisig - I probably make this recipe once a week and would always have it with a side of rice. It’s my take on the really popular Kapampangan recipe and I love adding calamansi (Philippine lime) juice to make it a bit sour! It’s also really good and flavourful from the onions and other spices. _ 3️⃣ Adobo - I think this is one of the most popular Filipino recipes, which is also a way of cooking. It usually involves cooking meat or vegetables in a mix of soy sauce, vinegar, pepper corns, and bay leaves. _ 4️⃣ Arroz a la Cubana - minced ‘meat’ with peas and raisins served with some rice and fried saba bananas. This is a very Spanish-influenced dish because the PH was a Spanish colony for 333 years! _ 5️⃣ Longganisa - Filipino-style sausages that are served with a side of fried garlic rice (“sinangag") and scrambled tofu in replacement of egg (“itlog”). Combine the the three (“longganisa" + “sinangag" + “itlog") and you have some Longsilog! _ It’s been another long and busy week but there’s so much to be grateful for. Happy Friday! ✨

Recipe: 3/4 cup rolled oats 1/4 cup cocoa powder 3 tbs coconut sugar 1 tsp baking powder 1.5 tbs pumpkin puree (can use mashed banana/applesauce) 1 flax egg 1/4 cup almond milk 2 tbs nut butter 1/2 tsp vanilla pinch salt optional: handful of choco chips Preheat your oven to 180 degrees Celsius and prepare a small tin by greasing it well and lining with parchment paper. Prepare your flax egg as well. Blend rolled oats until a flour-like consistency (or use oat flour). Mix in cocoa powder, baking powder and coconut sugar. Stir in pumpkin puree, flax egg, almond milk, vanilla and peanut butter. Batter should be thick and fudgy! Strawberry Mochi 🍓 with white bean paste. Who wants a bite? 😋 Via @nm_meiyee Via @veganbombs #veganbombs ・・・ . . Recipe Mochi 1 1/2 cups glutinous rice flour 1/4 cup sugar 1 cup water 1/3 cup cornstarch 12 fresh strawberries 2 tsp mix of Beet & Hibiscus flower supercolour powder @suncorefoods (dissolve in 2 tsp water) . . bean paste 2 canned white kidney beans (skin removed) 1/4 cup sugar 3 tbsp rice malt syrup . Press the beans with a spatula through a fine strain to get the smoothest texture. Transfer the paste to a pan. Add sugar, use low heat to simmer the exceeded water out. Keep stirring. As the paste is heated and sugar is dissolved, the paste will become loose. Add rice syrup, continue stirring all around so that steam gets out and the paste thickens again. Continue cooking until water has evaporated. About 10 mins. . Turn off the heat, allow to cool down. Flatten paste and wrap tightly in plastic wrap. . Mochi Combine the rice flour, sugar in a microwave safe mixing bowl. Add in water, mix until combined. .
Put the bowl into a microwave, heat it up for 1 min. Take the bowl out and stir the mixture with a heatproof spatula. Back into the microwave and heat it up for 1 min. Remove the bowl from the microwave. Keep stirring with the heatproof spatula, back into the microwave and heat it up for 30 secs, add the dissolved supercolour powder keep stirring until it thickens and comes together into one smooth. . Flour work surface with cornstarch. Put the mochi on top (Put some starch on your hands to prevent sticking) Cut the mochi into 12 pieces. Flatten the mochi into a circle. (use more corn flour if needed) . . Wrap the strawberries with bean paste. Put some starch on hands. Chinese Chives Boxes by @foodpassionical . Follow @vegancanteen for more delicious vegan recipes! #vegancanteen . Dough recipe: (Make 24 boxes) 400 g flour 210 ml water 1/2 tsp salt Add the flour and salt into a big bowl for easy kneading. Pour water little at a time. It’s all depending on the quality of the flour, some may need 210 ml of water and some may need less than 200 ml to have perfectly knead dough. Knead the dough till it doesn’t stick anymore on hand. (add flour if dough is too soft) Cover and let the dough rest for 15 minutes. Fillings recipe: 350g Chinese Chives, clean & finely chopped 1 carrot, finely sliced 100g shiitake mushrooms, chopped 4 clove garlic, minced 2 tbsp oil Sauce ingredients: 1 tbsp sesame oil 1 tbsp soy sauce 1 tsp white pepper 1 tsp ginger powder 1 tbsp mushrooms stir fry sauce Salt for taste . ✔Heat up oil in a wok, add in the garlic and sauté till fragrant. Then add the carrots and cook till soft, follow by mushrooms. Add in the sauce ingredients and stir for another 2 minutes. Turn off the heat, lastly add in the chinese chives and mix well. Let it cool completely before use. ✔Take out the dough from the bowl and knead for a few seconds. Divide the dough into 24 pieces (about 40g per piece). Roll each piece into a circle (about 4 1/2 inch in diameter). Place the fillings in the middle and seal it in the same way as to fold a dumpling. Place the fold side down and gently patch it flat. ✔Heat 2 tbsp of oil in a frying pan, place the fold side down and cover it. Cook with medium low heat. Flip the chives box until both side are golden brown. ✔Finally serve hot with chilli oil or your favourite sauce

Mediterranean Chickpea Salad by @eatwithclarity 🥗 Delicious, healthy, and packed with so much flavour! ​. ​INGREDIENTS Salad: 2 cans chickpeas 1 red bell pepper, chopped 1 cup chopped red onion 1 cup diced cucumber 1 cup halved grape tomatoes 3 green onions, chopped 1/4 cup chopped parsley 1/4 cup chopped basil Optional: 1/2 cup pitted kalamata olives Dressing: 3 tbsp olive oil 1–2 tbsp red wine vinegar 2 tbsp lemon juice 2 cloves garlic 1/2 tsp sea salt (or to taste) 1/2 tsp black pepper Optional: 1 tsp red pepper flakes ​. INSTRUCTIONS Drain and rinse the chickpeas until no bubbles remain. Add them to a bowl with the chopped pepper, onion, cucumber, halved tomatoes, green onions, parsley and basil. Whisk all of the ingredients for the dressing together in a bowl and pour over the salad. Mix to combine well. Poppy seed fig dumplings by @talesofhorizon 😍👌 . Dough⠀ 190g vegan yogurt Skyr style / vegan curd⠀ 190g oat flour⠀ 50g peanut butter⠀ 3 tbsp applesauce⠀ 1 pinch of salt⠀ 2 pinches of raw cane sugar⠀ .⠀ 7-8 figs⠀ .⠀ Coating⠀ 2-4 tbsp poppy⠀ 2-3 tsp of raw cane sugar⠀ .⠀ 1. Mix all ingredients for the dough.⠀ 2. Cut off the stems from the top of the figs and wash the figs.⠀ 3. Boil enough water to cover the dumplings.⠀ 4. Moisten your hands and take about 1-2 tbsp of dough and wrap the fig with it. Spread the dumplings nicely round with moistened hands.⠀ 5. Moisten a ladle and carefully lay the dumplings in the water.⠀ 6. Let it simmer for about 8 minutes. Also reduce the heat to low to medium heat now.⠀ 7. Prepare a bowl of poppy seeds and raw cane sugar. The figs are naturally sweet but who likes it very sweet adds a tsp of sugar in the bowl.⠀ 8. When the dumplings are floating and the 8 minutes are over get them out of the water.⠀ 9. Then roll them individually in the bowl and coat them with the poppy seed-sugar mixture.⠀ 10. When the dumplings are already dry you can moisten them briefly before rolling them in the mixture. ⠀ 11. Enjoy! You can serve it with cinnamon & sugar, applesauce or simply without extra toppings. They are so delicious too!⠀

The result of a successful meal prep! I’m honestly not the best at meal prepping, and I feel like bloggers make it seem much easier than it really is. But I’ve learned that if I just cook a ton of veggies and a few 1 or 2 protein options, I can create multiple satisfying meals that will get me through most of the week.⁣ ⁣ This week, I roasted a large butternut squash in avocado oil, 2 delicata squash with cinnamon and cumin, and a medium sized bunch of broccolini. I also simmered some sliced onions in ACV for about 40 minutes (truly SO delicious!), boiled 2 cups of lentils, and baked a large piece of salmon bought at Trader Joe’s. I also had mixed greens in my fridge to prepare a salad, as well as a jar of Yai Thai’s yellow coconut curry sauce.⁣ ⁣ Having these options ready to go in my fridge allowed me to create these simple but delicious meals in a matter of minutes 👌🏼 ⁣ ⁣ #mealprep #plantbased #healthyeating #healthymealprep

BUTTERNUT RISOTTO In the UK the weather has been surprisingly warm and sunny! But leaves are falling off the trees and autumn is well and truly in the air. 🍁🍂☀️ It’s pretty magical💫 So this risotto embraces the best of autumn with lovely seasonal roasted butternut but still bursting with summer freshness with the rocket and pumpkin seeds. Give it a go! I cubed the butternut into small cubes and covered generously with herb salt, cumin and olive oil. Roasted on high heat (210-220c) for about 25-35min. Until nicely soft but kinda caramelised on the edges. Check and put back in the oven if needed. Stir through your favourite white risotto recipe and top with fresh rocket, pumpkin seeds and a drizzle of olive oil. Bitter herbs may not be appealing but in the long run, they’re just what you need to reach your health goals. In reality, the less you enjoy the taste of bitters, the more you need them 📝 These days, we taste something bitter and our first instinct is to run for the hills because we’ve been programmed to replace natural flavors with artificial flavor enhancers. If you read my post on junk food addiction, you should be familiar with the term hyper-palatable which is the process of food being (engineered) to taste really good. We’re programmed on sweet and salty foods and many of us have no clue how much bitter herbs contribute to our guts and intestinal health. It’s become foreign. The healing starts when the bitter herbs touch the tongue and this is why I find products like my parasite cleanse to be more effective as an herbal tea. The bitters promote a distinct and very positive response as soon as they reach our taste buds. This stimulates the production of saliva and gastric juice which promotes the digestive process and ensures that all nutrients and vital substances in food are better absorbed. Recipe for Thai Papaya Salad - made using all fresh ingredients, no processed foods, no sugars, nothing packaged, boxed, tinned or canned. Everything fresh, straight from Nature 🌿😄 __________ Serves 2 - 3 INGREDIENTS 1⁄2 small unripe green papaya 1 large mango (or 1 soft pear) 1 medium carrot 2 medium tomatoes 1⁄2 cup fresh coriander Peanut Dressing 2 tablespoons raw peanuts, soaked in water for 3 hrs 1 tablespoon lemon juice 1⁄8 small green chilli 1⁄2 teaspoon rock salt 1 tablespoon jaggery 2 tablespoons water Topping 1 tablespoon raw peanuts, chopped METHOD 1. Peel the skin of the papaya. 2. Cut the papaya and carrot into thin long strips. You can use a julienne vegetable peeler to do this. 3. Also cut the mango and tomatoes into thin long strips, using a knife. 4. Place the papaya, carrot, mango, tomatoes and coriander in a large bowl and mix well. 5. To prepare the dressing, place all the dressing ingredients into a blender and blend until smooth. 6. Combine the dressing with the salad and mix well. 7. Top with chopped peanuts for an extra crunch. Substitution When mango is not in season, use a soft pear. 🧀The answer is in a special break down product of the milk protein casein called casomorphine. It is in the same class of chemicals as morphine called opioids. Although not as potent (about 20x less), cheese has many red flags. . . 🧀Why would nature design an opioid in milk? It is believed that these opioids help provide a calming effect to newborns in both humans and animals. Additionally, it establishes the mother to infant bond that is so necessary in early development. This is incredible and natural when you are an infant but as we grow older these opioids have unfavorable effects. . . 🧀Cheese is in no way a natural food. It takes 10lbs of milk to make 1lb of cheese and so what you have is a high fat, salt, and cholesterol concentrate with poor nutrition. Casomorphine holds concern for addiction because in several animal studies it has been shown to bind to the same receptors of the brain as morphine, codeine, and heroine (mu-receptors). Although not as potent there is concern for some level of addiction and withdrawal. . . 🧀Epidemiological evidence suggests that one type of casomorphine (BCM7) is most alarming because of it being a risk factor for diabetes and cardiovascular disease. There needs to be well designed studies but as of now there is a growing recognition. Additional effects of BCMs are seen in food allergies (activates histamine release), delayed gastric emptying + heartburn, constipation, sudden infant death syndrome (due to the respiratory depressive properties of opiates coupled with at risk children), and delays in psychomotor development/ muscle spasticity in children exposed to cow opiates. . . 🧀Cheese is one of my top worst foods. It has poor nutrition and causes issues like mucus production, eczema, asthma, bloating, reflux, constipation, acne, reproductive issues and hormonal imbalances. Is it addictive? Yes, in practice it is hands down the most difficult food to eliminate. But in today’s day we have so many healthier options. I like when it comes to quality alternative cheese. Made some rice, mixed in a can of tomato paste (look for added ingredients! Your tomato paste should only have tomatoes in it!), a bunch of cilantro (chopped) some green onions (chopped) from the garden, 3 enormous tomatoes (chopped) from the garden, and a head of cauliflower from the garden (roasted that at 425° for 10 or so minutes first). Seasoned with sea salt to taste. So good!!

Oh my goodness, I found dragonfruit smoothie packs!!! I am so excited!! And they’re organic which makes me even happier! Of course, I had to buy them and make smoothie bowls! They turned out amazing and such a beautiful pink color! I love color in my meals, the more color the happier I am 😁 I found these smoothie packs at one of our local health stores, Natural Grocers. I did a little happy dance in the aisle-no joke! 💃💃💃💃 Ingredients: 1 dragonfruit smoothie pack 1 cup of frozen pineapple 1 cup of frozen mango 1/2 apple 1 cup of coconut water Toppings: Star fruit Raspberries Blackberries Hemp seeds Cacao nibs Unsweetened coconut flakes Directions: 👉Add all ingredients into the vitamix, or high speed blender 👉Purée on level 10 until smooth, then switch to high mode for about 30 seconds 👉Pour and add toppings 👉Serve, smile and enjoy 😋 This was the first time I’ve eaten a smoothie bowl and felt cold in months...it’s nice it’s starting to cool down quite a bit in the desert but it also makes me sad that summer is ending...I love all the fresh fruit and smoothie bowls are my favorite during the summer. This might be the best cobbler I've ever made, with sweetness from ripe peaches, tartness from plums and a little tapioca to thicken. But the best part is the almond oat sweet rice biscuit-y crust. Orthorexia is obsessive behaviors in the quest for a natural and healthy diet and lifestyle. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ When I first dove into a healthy lifestyle I was very conscious of this, as a person who recovered from Anorexia, I didn't want to end up putting my health at risk while trying to save it. Does that make sense?⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ It forced me to be very conscious and aware of my own behaviors. I remember listening to a podcast and the host was talking about not eating out because the food wasn't organic, and feeling guilty because I wasn't "strong" enough to do the same. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Falling into that mindset can be very dangerous, and I wanted to share a few tips that I've put into practice to help me stay healthy - in every sense of the word. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I am very strict about what I put into my body at my house. I am extra careful about reading labels, eating organic, and non-gmo. When I go to a friends house or a restaurant I allow myself to enjoy the moment, and be a little less strict.⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I always choose the healthiest option I can, I usually go to the crudite instead of the processed chips even if it's not organic. The real whole foods don't leave me with a hangover the next day.⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I am mindful of the dirty dozen/clean 15. When I'm ordering out at a restaurant that I know doesn't serve organic on non-gmo produce I choose wisely. I avoid cauliflower and strawberries because those are heavily sprayed crops, but I don't sacrifice a meal with my friends or family because of this. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ If I'm going to a BBQ or a friends house for dinner I usually bring something with high quality ingredients that I would eat in my house. That way I can fill up on that and sample the rest if I chose too. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I also keep in mind that this is a lifestyle, I allow myself to bend so I don't break. I avoid it controlling my life by making conscious decisions, and having other practices set up in place to help me feel better if and when I do eat non-organic, gmo, or vegetable oil ridden foods.
