There are so many different kinds of pasta and this variety of shapes makes it really difficult to choose - but I want to know: what’s your favorite?
My favorite definitely are rigatonis - because the sauce is IN the pasta and always gives me a special memory of my grandma!
Recipe for the sauce:
2 tbsp olive oil
1 red onion, quartered
1 clove garlic, smashed
1 bottle passata (around 700 ml)
1/2 cup almond milk
1 cup water (200 ml)
a small handful fresh basil leaves
1 tbps oregano, dried
2 tsps salt & pepper to taste
2 tsp chili powder (optional)
In a big pot add oil, onions and garlic and brown on medium heat for around 5 minutes. Add the rest of the ingredients, cover with a lid. Cook for minimum 30 minutes on low heat and stir occasionally.
EXTRA TIP: The longer you cook the tomato sauce the tastier it is!
