Dinners for the week are prepped 🙌 I paired 1 cup of spaghetti squash “noodles” with 1/2 cup Organics brand roasted garlic spaghetti sauce and 4 homemade turkey meatballs. The squash/meatballs do take some time to cook in the oven, but this meal prep is still very easy. 1❤️ 1💚 1/2💜 each 👉Squash: Cut a spaghetti squash in half lengthwise and scoop out the insides. Bake it face down on a baking sheet, 400 degrees for 40-45 minutes. Use a fork to get the noodles out (look up a YouTube video to see how it’s done- don’t scoop it out lengthwise that’s the wrong direction!) 👉Sauce: I cheat and buy the Organics brand roasted garlic pasta sauce from Safeway. It’s clean and delicious and I love it 🥰 👉Meatballs: In a bowl mix the following: *1 lb lean ground turkey *1/4 cup quick oats *1/3 cup dried parsley *1 egg *3 Tbsp plain tomato sauce (optional, I didn’t add this like I normally would because I knew I was serving it with sauce) *3 tsp minced garlic *1 Tbsp dried basil *1- 1.5 tsp salt *black pepper, to taste Stir all of this together. Form into 16 balls. Place meatballs on a baking sheet lined with foil and sprayed with olive oil mist. Bake at 400° for 15 minutes, then turn over each ball and bake for about 5-10 more minutes. Monday May 20, meal planner or leftover queen? Oh no, dolls, it’s Monday again and once more, i didn’t make it to the grocery store this weekend. I KNOW! I need to figure this out! I’m envious of those of you who enjoy meal planning and preparation- but, I just do not. I like to bake but the rest of it leaves me pretty cold. I could just eat the same thing day after day, or throw an omelette together and be done with it! I’ve had periods in my life when I had this more under control but lately, with my husband and I each having two jobs, and a busy teen in the house... it’s just not easy to find the time. When I do go, I bit the basics I know we will need but M not at all creative, searching out new things or making elaborate meal plans. I need inspiration! I’m very, very fortunate that I can buy what food I need and I don’t take my food for granted - I just don’t think about it too much, either. Having been nauseated this entire past week was hard too - nothing was appetizing. ( I’m almost 💯 so thank you all for asking.😘) So- do you plan way in advance? Se que he tenido varios días un poco ausente, pero ya a partir de mañana vuelvo en retomar mi enfoque. Iniciaré una semana cargada de energías positivas. Una de las cosas más importantes también, es darle a mi cuerpo la nutrición necesaria para poder exigirle al 100 %. Ya saben que me encanta dedicarle a mi #MealPrep de los domingos. Realmente es la mejor forma que recomiendo, para así ser capaz de permanecer encaminado hacia mis objetivos Fitness. Comenzar una semana planificando y organizado me permite ahorrar tiempo, dinero y sobre todo a no saltarme comidas de mi programa alimenticio. #MealPrep además de esta forma puedes saber cuánto y cuándo comer, sin caer en tentaciones o que te confundas entre comidas. Recuerden que si fallan en la planificación, estarás colocando tus objetivos más lejos.

For almost 4 weeks I’ve been prepping my meals for lunch! I’m so happy this is now a habit rather than something I forget. Every morning I have a routine: wake up, brush my teeth, have breakfast, get ready, and pack my lunch. It’s important to find what works for you.. try a routine for 10days - if it’s difficult to stick to, make it easier for yourself and try again! 🙌

Now I know this claim is going to make some vegans upset but we are all entitled to our own opinions and ..... “I believe we were put on this earth to eat both meat & plants!” Don’t get me wrong I think a diet that is focused on mainly plant based is best but you can’t go past the health benefits of eating meat! 🌱 We need a lot of protein to be healthy, to repair our cells & tissues and the best pure source is meat. 🙌🏻 We need a lot of fibre to be healthy, for great digestion, gut health and regular bowel function and the best source plants! 🌱 There is a reason humans were put on this earth as the superior race with an abundance of meat and plants. We are programmed to hunt and gather, it’s primal, it’s in our nature and it’s actually what keeps our eco system healthy and makes the world go around. 🌍 Anyway, meat and plants in the right balance work in a perfect harmony for good health! Like this delicious #lchf warming winter I just created tonight! 🤤 Slow cooked beef curry made with my fav slow cooked meat Osso Buco. The marrow bones not only taste amazing but they are jam packed with gut boosting goodness like collagen and glutamine which helps to line the gut walls preventing conditions like leaky gut syndrome and helps our cells to absorb more micronutrients like essential vitamins and minerals. 🤗 I’ve teamed this dish with a broccoli rice to keep the carbs low, the fibre high and the dish nutrient rich. 👌🏼 Other benefits of this winter warmer include the fact it’s high in both heam and non-heam iron 🌱 and having a sauce made with mainly tomatoes that are high in Vit C we can actually absorb and make use of the iron! STEAK, SCALLOPS AND CAULIFLOWER MASH 🥩 • Umm...what a feast! This was so heartwarming to eat, a very homely meal and the scallops added a bit of fancy schmancy to it. Honestly so easy, whipped up the cauli mash in the food processor and steamed 100g of broccoli to go with it to get some greens in me. Per preparare il burro chiarificato a casa, basta mettere il burro in un pentolino con il fondo spesso e farlo andare a fuoco dolce. Ad un certo punto, si separeranno le diverse parti: - la caseina precipita sul fondo - la parte acquosa affiora Quando l'acqua evaporerá completamente (ci impiega meno di un'oretta) spegnere il fuoco. Travasare la parte gialla in un contenitore di vetro utilizzando un colino rivestito da una garza. Essendo privo di acqua, si conserva più a lungo del burro normale. . Das stimmt leider nicht ganz :-( Als Faustregel kannst du dir merken, bei -18 Grad : Fisch ca 2-3 Monate Fleisch ca 12 Monate Gemüse und Obst ca 6-12 Monate je nach Sorte Brot / Backwaren höchstens 3 Monate . •|| NO BAKE COOKIE DOUGH PROTEIN BARS ||• Ever since @michelle.erin.mcgrattan posted these bad boys I have been dying to try them myself! Luckily, I suffer from insomnia and there’s not really a lot to do at 5am other than bake (or clean but no thanks)! Had to modify the recipe a bit based on what I had available, but they turned out ABSOLUTELY DELICIOUS 🤤! Seriously guys, these are on par with store bought and so incredibly easy to make! Recipe: 1/2+1/8 cup @bobsredmill coconut flour 1/4 cup almond flour (I got mine from @blushlane ) 1/2 cup @botanicahealth vanilla plant based protein powder 1/4 tsp baking soda 1/2 cup @befreshlocal almond butter 1/3 cup pure maple syrup 1/4 cup unsweetened almond milk 1 tsp pure vanilla extract 1/3 cup dairy-free dark chocolate chips Directions: 1) Line an 8x8 baking dish with parchment paper 2) In a large bowl, mix coconut flour, almond flour, protein powder and baking soda until just combined 3) Add in almond butter, maple syrup, almond milk, and vanilla. Stir using a spatula until a large dough ball forms 4) Using moistened fingers press dough evenly into baking pan. Top with @enjoylifefoods chocolate chips or other topping of choice! (Shredded coconut or nuts would also be tasty) 5) Allow to harden in freezer for 1-2 hours before digging in I cut mine into 9 large bars as Michelle recommends and I’ve found this to be the perfect, satisfying size. Meal prep is essential to my success. I like a lot of snacks so I really focus on 0 point foods. Ideally, I have plenty of points leftover to enjoy a more point-heavy dinner with my family. Lunch is cauliflower rice (seasoned with coconut aminos), broccoli and grilled chicken (all 0sp). Meal prep was goin down while my little one napped and my big one followed @toneitup videos from the on demand section 🤗😂 It was so stinking cute- it also kept him busy for about an hour! 🙌🏼 He kept saying “oh, wow...okay that’s too hard. Mommy they forgot their water! Ohh okay that’s Karena... Mommy, I followed them!” 😂😂😂 Food shopping has been happening mid week lately, so I was able to filet and marinade chicken that we will grill tonight for the week, and breaded cutlets for my son, then I baked turkey meatballs in the oven. I was also able to bake some sweet potatoes and chop veggies for quick snacks or pair with dinner. A little planning is better than nothing! Excited for a new week of focusing on nutrition and fitness with the warm weather giving me life! Another goal for this week is to continue being present with my kids and having one on one time after school. It’s hard doing more active things with an infant without hubby, but I’m hoping to figure out some creative ways to be playing with my son outside and having the baby hang with us. It’s Monday & it’s a new week. Although I’m 99.9% sure I killed it last week! I walk/jogged 22 miles total last week. Hit my new low weight of 174.4 (which is a 5.6lbs loss last week because I had managed to get back up to 180) I look leaner (which I can’t show y’all yet) & I feel amazing ! New week means new goals. 25 miles total this week. Dark Chocolate Bacon Cupcakes  12 slices bacon 2 cups all-purpose flour 3/4 cup unsweetened cocoa powder 2 cups white sugar 2 teaspoons baking soda 1 teaspoon baking powder  1/2 teaspoon sea salt 2 eggs 1 cup cold, strong, brewed coffee 1 cup buttermilk 1/2 cup vegetable oil 1 tablespoon unsweetened cocoa powder, for dusting Directions Preheat oven to 375 degrees F (190 degrees C). Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside. In a large bowl, stir together the flour, 3/4 cup cocoa powder, sugar, baking soda, baking powder and salt. Make a well in the center and pour in the eggs, coffee, buttermilk and oil. Stir just until blended. Mix in 3/4 of the bacon, reserving the rest for garnish. Spoon the batter into the prepared cups, dividing evenly. Bake in the preheated oven until the tops spring back when lightly pressed, 20 to 25 minutes. Cool in the pan set over a wire rack. When cool, arrange the cupcakes on a serving platter. Frost with your favorite chocolate frosting and sprinkle reserved bacon crumbles on top. Hope everyone’s Monday’s going good so far 😙💫. . I done some meal prep yesterday for the next 4 lunches. I fried off chicken breast in frylight (both free), sliced red peppers, onions, garlic (all speed free) and sprinkled in KMC salt and pepper seasoning (0.5 syn per level tsp) and chilli flakes. I’ll add some lighter than light mayo when I go to eat them too (I usually use Hellmanns - 0.5 syn per level tbsp). . I used my 2 compartment @igluumealprep boxes and loaded the other side with fresh blueberries and raspberries (both speed free). Happy Monday IG 🥰🥰🥰 I know weekends can be hard for so many of us. Im not gonna lie... I went out 3 times this weekend, ate yummy food, and had a few too many drinks. 🌮🍕🍟🥨🍺🍺🍺 In the past I would cheat once and throw in the towel and go completely wild all weekend. I’ve been working hard to not let weekends ruin me!! I did my best to continue tracking my foods.. I tried to make good choices throughout the day with the foods I picked so that it I indulged a bit later it balanced it out 🤷🏼‍♀️🤷🏼‍♀️🤷🏼‍♀️ and followed my IF eating hours each day. These are a few ways I try to get through the weekend so I can still enjoy but not completely ruin my progress. Making small changes like choosing grilled vs fried or a lower calorie drink vs high calorie beer are small changes that will make a big difference over time. Im a work in progress and still learning- but if you over did it this weekend, don’t beat yourself up... start fresh — drink lots of water today, get a good workout in, eat healthy but don’t starve yourself! Another post, anyone weird, water-based, St. Andrews tradition? University are done! My degree is done! I finished officially on Friday and I was soaked (swipe to see it). Thank you to everyone who came along, it meant so much to me to see everyone! So yeah, I’m graduating 5 weeks today. For the last 6 weeks or so I’ve been completely focused on my dissertation and my exams and I’ve let myself go a bit. I’m the heaviest I’ve been in a long time, which sucks, but I’m not beating myself up too much. I’m going to be really active over the next 5 weeks, I’ll be working in one of the halls here and working out alongside it and I’m going to be counting calories again. Hopefully I’ll be able to lose weight before graduation, at least getting down to 107kg again. I won’t be posting often about the journey though, maybe once a week if I’m making decent progress. How much weight can this egg lose? Starting week 5 of prep. Here’s what I’ve learned about myself. 👍🏻 - Following a meal plan is simple, but it’s not easy. - Prepping meals on Sunday works. It helps that @superfitfoods does two meals a day for me. - I actually enjoy eating before I lift now. Even though I had never heard of cream of rice and I have to get up at 4:45 am to do it. - My core is still being stubborn post gall bladder surgery.
