One of the biggest parts of my journey has been turning my constant negative thinking into positive thinking. I came from a very negative place and throughout this last year I CHOSE to start looking at things from a positive perspective. Negativity really can and will hold you back. It’s funny the things that will change when you stop telling yourself you can’t do something and start telling yourself you can and will do this. Be kind to yourself. Stop being so nasty to yourself all the time. No you can’t just love yourself healthy but that’s one of the first places you should start. Remove chicken and set aside on a plate. Add the sliced mushrooms and cook for a few minutes until tender. Remove and set aside. To make the sauce add the butter and melt. Add garlic and cook until tender. Whisk in the flour until it thickens. Whisk in chicken broth, heavy cream, parmesan cheese, garlic powder, pepper and salt. Add the spinach and let simmer until it starts to thicken and spinach wilts. ✨ Keto Taquitos!!! ✨ • I cooked up some ground beef, onions and garlic (added onion salt pepper, chia and flaxseeds)... • Then baked a mix of mozzarella and medium cheddar shredded cheese 🧀 at 375 degrees for 8 minutes... • Rolled up the cheese w/ some of the ground beef goodness, sprinkled cilantro, and voila!!! 8 years ago I had a dream of doing the Disney Half Marathon. Training was going well.................................7 years ago life events and injuries happened. I gave up on my dream................. Through those 7 years I still did 5ks with my family but instead of crossing the finish line in 30something minutes it often was more than an hour. Instead of celebrating with those clapping as I crossed the finish line I was embarrassed. My husband has been my support through it all. He was with me when I wanted to do my first 5k at 40. He has been there through the ups and downs. After losing two siblings (ages 45 & 56) within 8 months recently he seem to know I needed to spark my dream alive again. We already had a cruise planned to celebrate turning 50 in January. It just so happened that our cruise ended on Friday and the Disney Half Marathon was on Saturday. In September we started training. It was tough. I was slow and was dealing with many aches and pains. I knew I could meet the 16 minute mile requirement but after 6 miles I slowed down. When I did my 14 mile training my pace averaged 18:30 per mile. On packet pick up day, I wondered what was I thinking. I had so many pains the stairs at ESPN were a challenge. I knew friends would be following my progress and I was worried I wouldn’t make it past the first 5k. But when I crossed that finish line...something broke inside. The release of emotion caught me by surprise. I wept tears of joy. I didn’t care what my time was................. The reason I chose the verse I did for this photo is my pace was 4:13 slower when I finished this race than it was when I gave up on my dream. But I can do all things through Him that gives me strength. I am thankful for my family and friends support. I am thankful to God for giving me the strength to celebrate my 50th birthday in such a magical way. Don’t give up on your dreams. It was the picture on the left that started it for me. Here I am, jeans busting at the seams, trying to take an Instagram worthy family picture over the holidays. Seeing the pictures, enough was enough. I started Keto 12/30/18 to take control of my health, and I’m down 11.7 lbs and counting. I have a long way to go and lots of goals! I know it’s good progress, but I’ve felt the weight loss has been slow compared to others and I’ve been discouraged along the way. I stalled for about 3 straight weeks straight going up and down the same 3-4 lbs. Having watched and been inspired by other Keto pages, I decided to start my own, both as a way to document my journey and to hold myself accountable. We had the most amazing hot pot tonight. . Finally hit up @tt_supermarket and picked up some beautifully fresh and natural ingredients yesterday for this mea. Since we left the #cityofangels I’ve seriously missed my Asian groceries and this was the perfect fix. . I packed this soup full of endive, enoki mushrooms, bok choy, garlic, chilies, onions, flank steak, and shrimp, and tossed in some @nupasta for a treat. The hot pot mix we picked up, when combined with the Thai chilies though created a serious 🔥 situation . You can be lean with carbs. ____ Fasting does not lead to fat loss anymore than eating 6-8x/day. Who says you can’t eat pizza on keto!? 😋 For dinner tonight I made my very own cauliflower-crust pizza. Not only was it simple but also amazing! 😍 For this recipe, I purchased a 10oz. bag of frozen riced cauliflower for the crust to save some time. You can also buy a head of cauliflower & “rice” it up by placing in a food processor if you don’t want to buy frozen. . * Preheat oven to 400 degrees F. . * Heat the cauliflower rice in a dry skillet on medium/high heat removing as much moisture as possible. . * When you see it’s pretty much dry, add 1 cup of parmesan cheese, 1/4 tsp. of onion powder & 1/4 tsp. of garlic powder. I also added a mix of Italian seasonings to really give the crust some good flavor. . * Continue to cook the cauliflower until you see the parmesan cheese has melted. * Remove from heat & add 1 egg to the mixture. This will get the crust to stuck together nicely! . * Grab a round pan, or any that’ll fit for that matter & use parchment paper to lay out the crust. I also sprayed the paper w/ olive oil cooking spray. You can also use coconut oil! . * Spread out the crust and flatten as much as you can all while making it round. If it’s too sticky (which it wasn’t for me) you can use another piece of parchment paper to flatten it out. . * Tip — make the crust slightly higher than to form an actual crust. Doesn’t have to be perfect. . * Once you’re satisfied w/ your crust, bake in the oven for about 20 minutes. . * Add whatever toppings you choose & bake another 10 minutes! . * For pizza sauce, I used Rao’s because it’s lower in sugar and carbs. This is probably your best bet for a low carb pizza. For toppings, I added pepperoni, bell peppers & just a little bit of onion! Careful on the onion because it does contain sugar! . * Cut into slices & enjoy! 😋🍕

I was going to make protein pancakes, but I thought I didn't have enough time, so I made this purchased paleo porridge. I thought it tasted bad & wrong last time I ate it, but I put that down to almond milk. Well, I was wrong. This time I prepped it with water. Not to mince words, but it tasted like someone had thrown it up. So there goes my food prep time, wasted food into the compost bin, and about thirteen bucks. Disappointment face. Fun facts; #1 I’ve been a night time binge eater since I was in my teens. I’ve curbed this a lot on my journey but I still eat at night sometimes. Normally still within my calories and macros, my go to is frozen raspberries and peanut butter, but eating at night makes me bloat. Simple as that. #accountability I’ve eaten late at night the last two nights. Part of it I think is switching to a new eating schedule, part of it is just old habits. I’m trying though and I’ll let y’all know how it goes tonight in the morning. 😂 #2 though, my best friend 😍😍 She’s been my biggest supporter of my journey. She tells me what I need to hear, she encourages me, understands my short comings, reassures me when I’m down, and always lifts my spirits back up. My fave keto cinnamon rolls or should I say my boyfriends fav cinnamon rolls! He told me today to meal prep these for his breakfast all next week 🤣🤣🤪🥳💁🏻‍♀️🎉🥰 Ok love will do lol. Super easy recipe: 2 cups shredded mozzarella 3/4 cup Almond flour 1 tsp baking powder 1 egg 2tbsp melted butter 3 tbsp cream cheese 2 tbsp your choice sweetener— (I use lakanto monkfruit confectioners) 1 tsp vanilla 1 tsp cinnamon * * * Combine the Mozzarella Cheese and Cream Cheese in a microwave-safe bowl and cook it on high for about 1-2 minute. After the cheese has melted, add baking powder & Almond Flour mix well, then add 1 beaten egg and mix well. It will eventually all mix! Roll dough out with parchment paper on top and bottom. Best to try and form a square. After rolled out add cinnamon and your choice sweetener( lakanto confectioners , swerve, powdered erythiritol etc) to sprinkle on the dough after you roll it out. I did not measure but Im sure at least 3-4 tbsp of sweetener. You can add chopped nuts on top of dough as well. Roll up! Cut with sharp knife easily or unflavored dental floss( works like a charm!) Bake at 350 for 17-20 mins of until brown. Top with cream cheese that is mixed with your fav sweetener. This is the difference between Jan 1st and today. Its -28lbs. It's been hard. But I am so ready to start meeting more goals. I am finally under 250lbs. To most of you that probably seems like a crazy thing to be proud of. I understand. I used to judge people a lot. I never understood how people could get that big.. until that person we me. Being under 250 means I am under the weight max for rides, slide and activities. I no longer feel shameful and like I have to lie. And don’t be fooled when I said limit your fruits (I mean choose your type of fruits wisely - find those contain less sugar and carb, well I eat strawberry daily as my carb intake. So my diet has been a little all over the place lately (I blame my Instagram feed and Girl Scouts of America) so I’m definitely trying to get back on track this week by adding recipes to my weekly rotation that are focused around proteins and veggies, starting with Healthified SPAGHETTI SQUASH SHRIMP SCAMPI 😍 so flavorful, you’ll forget it’s not actually served on a bed of pasta 😋 For the Spaghetti Squash Shrimp Scampi: Start by cooking your spaghetti squash. Preheat your oven to 350 degrees and cut your squash in half hot dog style. Drizzle with olive oil and season with salt and pepper. Place face down (?) on a baking sheet and bake for 40-50 minutes depending on the size of your squash. Once done, shred with a fork and set aside. Get a cast iron nice and hot and add in some ghee or coconut oil. Sear 1/2 lb shrimp for about 1-2 minutes on both sides and season with s+p. Remove from pan. Add in a handful of chopped green beans and cook until blistered. Remove from pan. Add in a bit more ghee and sauté 1 shallot and 3 cloves minced garlic until translucent. Add in about a cup of white wine on high heat and reduce down until alcohol has evaporated. Add in about a cup of chicken stock and stir until it starts to thicken up. Add in a cup of parm (omit if doing @whole30) and stir. Add back in the squash, shrimp, and green beans and serve! So delicious, and so easy for meal prep of quick weeknight meals, especially if you can cook the squash ahead of time 🍝 all ingredients from @sprouts and recipe in highlights✨
