[年糕] I grew up eating this every year. It signifies getting higher and higher each year! I love sandwiching the sticky rice cake in the middle of a slice of Taro and sweet potato. Parsi Kachumber Salad made in 2 Methods . Method 1 . Sprinkle sliced or chopped onions with salt & leave for 30 minutes to 1 hour. . Meanwhile, make dressing by dissolving sugar in lemon juice. Heat in microwave for 1 minute or less. Warming makes the sugar dissolve easier. Keep aside. . Squeeze onions between the palms to remove all salted liquid. . Mix all ingredients . ◆cucumber, peeled & chopped small . ◆tomatoes, seeds removed & chopped . ◆small piece of ginger, peeled & coarsely grated . ◆fresh chillies sliced, more or less chillies can be added, according to taste . ◆chopped coriander leaves. . adjust salt you would have squeezed out most of the salt from onions & may need extra salt for ingredients). . Served chilled. . Method 2 . Soak the tamarind & jaggery in half cup of warm water for 1 hr. Boil, cool & strain the water. . Add chopped or sliced onions, Chopped chillies, deseded chopped tomatoes thinly sliced, chopped cucumber's. . Add salt & the strained water mixture of Tamarind & Jaggery. . Tiramisú Ingredientes: 2 cucharadas de Brandy 1 taza de Café 18 plantillas tipo Savoiardi 3 Huevos ¾ de taza de Azúcar 400 gramos de Queso Mascarpone o su sustituto Cacao en polvo Si desean sustituir el Mascarpone, les dejo la siguiente receta para que la prueben. 1 ½ tazas de Crema para batir refrigerada ¾ de taza de Queso Ricotta 1 cucharada de Azúcar Preparación del sustituto: Bate la Crema en la batidora hasta que espese. -Incorpora el Azúcar y añade, poco a poco, el Queso Ricotta. No batas demasiado para que la crema no pierda volumen. La cantidad equivale más o menos a lo que necesitarás para la receta del Tiramisú En un recipiente vierte el Brandy y el Café y pon a remojar las plantillas tipo Savoiardi. Se trata de que absorban algo de Café, pero no demasiado, pues no queremos que se deshagan. Bate a baño de maria las Yemas y el Azúcar hasta obtener una mezcla homogénea. -Añade poco a poco el Queso Mascarpone o su sustituto y transfiere esta mezcla a otro recipiente. -Lava bien el recipiente de la batidora y en él, bate las Claras a punto de nieve a baño de Maria.-Con una espátula de goma, incorpora las Claras batidas cuidadosamente a la mezcla de Yemas y Azúcar en movimientos suaves y envolventes. -Una vez que tienes todos los ingredientes a la mano, armar el Tiramisú es lo más fácil. Trata de hacerlo rápido para que las plantillas no se pongan demasiado blandas. -Busca una fuente de servir que sea profunda. Forma una capa de plantillas, dejando el lado mojado en Café hacia arriba. Cúbrela con una de capa de Queso Mascarpone. The last time that I made teriyaki chicken my son told me he wanted me to make it for him as a sandwich. And today I did! Sunday dinner... salmon and tuna melt! Today I made use of the salmon and tuna odd ends and pieces, from my trips to the fish market, that I currently have in the freezer. * * Process: -I seasoned and cooked the fish in the oven. -Removed the bones and shred by hand. -Seasoned with red onions, parsley, black pepper, and homemade yogurt that I bought the other day (extra health points!) -Topped with mozzarella cheese and popped them in the oven. Tonight for dinner we had... Moroccan chicken calzones! A couple of weeks ago I made Moroccan chicken for the first time and thought it was delicious! Today I made it again, with a small twist, as a calzone! I followed all the cooking directions(did not add eggplants and I used chicken breasts), then after the chicken was done I removed it from the pan, shred them, mixed it back with the sauce and used it as filling for the calzone along with mozzarella cheese. * * Recipe Link: http://www.eatgood4life.com/moroccan-chicken/ * * *

Dinner being served by hubby @vieirajjoao tonight. Chicken quarters with carrots and potatoes and a super tasty looking gravy. Tonight’s dinner is another chef João exclusive. This is another one of his creations. The official dish is pan seared scallops, butternut squash and pomegranate risotto. But this dish was a trial run and they did not have butternut squash. I don’t know about you guys but I wouldn’t mind having that pomegranate risotto in my life right about now 😋. Ok everyone tonight we have another Chef Joao❤️ treat. He started his new job at an amazing new seafood restaurant and he sent me this video of one of his creations. The dish is pan seared halibut over butternut squash puree and diced delicate squash and beurre blanc sauce. I don’t eat shrimp but I can still appreciate the beauty of a well made dish. Tonight we have a special treat!! Dinner is being served by my babe, Chef João. He sent me pictures of this AMAZING dish that he cooked and I couldn’t wait to share it with you all. It is, pan seared salmon with Cubbanelle peppers, Mexican Jalapenos, capers, kalamata olives, Moscato wine sauce, red and white pearl onions and chili peppers. Served on a bed of all fresh roasted fingerling potatoes. I’m a little devastated that I wasn’t there to eat this 😆. Today in my kitchen we have SENEGALESE food! This dish is called “Poisson Yassa” or fish Yassa, and I used salmon in my version, with baked potatoes. See recipe link below 👇🏾. I did not use Maggi powder in mine, the recipe said it was optional. Today the spotlight is on my love and biggest culinary inspiration by far, Chef Joao. This dish was cooked 6 years ago in September 2012. It is an original dish of his own creation that he called “Ras Salmon Papaya.” The first picture is the finished product and the second picture is a process shot. As you see in the second picture, he baked the salmon INSIDE the papaya on low heat for a few hours, then he used the papaya as a serving dish adding rice and fries for the final presentation. How is that for creative plating guys? Even though all these years have passed I still remember this dish clearly and can you tell that it is the most delicious salmon dish I have had in my life. You can feel the passion that he has for cooking in every dish that he makes.
