“I ate and drank waaay to much this weekend, do you think I should go on a cleanse?!” . I get this question all.the.time! The weekend celebration- whether it was a birthday, hosting out of towners, or a wedding- is hardly over and already the talk of eating less/avoiding carbs/starting a diet gets ramped up 😬 . I had the pleasure of seeing one of my oldest friends get married 👰🏼🤵 this weekend and I wanted to drop this gentle reminder that yes, we all ate cake and drank champagne, but you STILL need to EAT today! . Trust me, I GET what you’re feeling (helloo, a little extra bloat and puff) but rather than going into “restriction mode” let’s be kind and respect our amazing bodies. My best advice is to listen to what your body is telling you it needs. Have regular, consistent meals 🍽, focus on filling half your plate with veggies 🥦 (I’ve got this kale, tomatoes, and cauliflower gnocchi dinner on deck), eat some high fiber carbs 🍠, drink plenty of water 💦, and move if it feels good 🏃🏼‍♀️. Homemade Corn & Mushroom Empanadas by @thevegansara 💛 Recipe: ⠀ Ingredients Dough:⠀ ½ cup raw cashews⠀ 1 cup potato flour⠀ ½ cup whole-wheat flour⠀ ½ teaspoon sea salt⠀ Unbleached all-purpose (or whole-wheat) flour for dusting⠀ ⠀ Filling:⠀ ½ pound white mushrooms, trimmed and roughly chopped (3 cups)⠀ 1 small yellow onion, cut into ¼-inch dice⠀ 1 jalapeño pepper, seeded and finely chopped⠀ 2 medium garlic cloves, minced⠀ 3 cups fresh or frozen corn kernels⠀ 2 tablespoons white miso paste⠀ 2 teaspoons ground cumin⠀ ¼ teaspoon cayenne pepper⠀ ¼ teaspoon freshly ground black or white pepper⠀ 3 cups chopped fresh spinach⠀ Sea salt⠀ 1 cup finely chopped fresh cilantro⠀ 1 tablespoon flaxseed meal (brown or golden)⠀ ⠀ Instructions:⠀ To make dough, soak cashews in ½ cup hot water for 20 minutes. Transfer cashews and soaking liquid to a blender or food processor; blend until creamy.⠀ In a food processor fitted with a dough blade or a stand mixer fitted with a dough hook, combine cashew “cream”, potato flour, whole-wheat flour, salt, and 1½ cups water; mix to a smooth dough, adding water if needed to make the dough come together.⠀ Using a spatula, scoop the dough into a large bowl; let it stand for 10 to 15 minutes.⠀ ⠀ To make filling, in a large sauté pan, combine mushrooms, onion, jalapeño, and garlic; sauté over medium heat for 10 to 15 minutes, stirring frequently, until the onion are translucent and the water from the mushrooms has cooked off. Add corn, miso, cumin, cayenne, and pepper; cook 5 minutes more.⠀ Add spinach and cook for 2 minutes, or until spinach is wilted. Add salt to taste. ✨ Kale Bean Soup ✨ Perfectly light yet a pleasing lunch option. A great way to squeeze those leafy greens in! ✨Serves 2✨• Ingredients •✨ 1/2 onion chopped, 2 garlic cloves chopped, 1 tbsp chopped fresh rosemary, 2 tbsp olive oil, 600ml vegetable stock, 1 x 400g tinned cannellini, 1/2 freshly squeezed lemon juice & 150g of kale- stalks removed. ✨• Instructions •✨ Cook the onion, garlic and rosemary in olive oil in a large pan for approx 8 minutes on low heat. Add the stock & two thirds of the cannellini beans, simmer for a further approx 10 minutes and then blitz it all together. Add the lemon, kale and the rest of the beans. Bring to a simmer and cook for a further approx 3 minutes. Recently, in a group chat with my college friends, they sent me a video of myself during our freshman year where I weighed my heaviest at 230 lbs (swipe to see ➡️). I watched in disbelief as I couldn’t even recognize myself. I started changing my lifestyle about 2 years ago and I got to my lowest weight last year in May where I weighed 150 lbs. As it goes, life happened and I gained some back where I’m currently at 175 lbs. As disappointing as that sounds, I’m finally in the right mentality again where I’m ready to kick ass and get it together. I have to keep reminding myself that it’s important to look forward and be proud of how far I’ve come, instead of feeling sorry and not taking any action behind it. Yes, I’m slightly embarrassed that I let you know my numbers, but my intention is to inspire someone out there who’s struggling and take them on my journey. Awesome smoky sweet potato and chickpea soup. I do love a soup and this might be a new favourite! It’s a substantial number as it is, but would also work with halloumi on top (what doesn’t) or even leftover roast chicken or sausages.
