Photo by @shredhappens ・・・ My food MVPs: 🥩+🍤+🥦. Steak, Shrimp, & Greens. . Here’s last nights post workout dinner. I had some grass fed garlic thyme ribeye, a couple of shrimp, and some Parmesan chili spinach and broccolini. . To make the garlic thyme steak: . 1. I used a piece of grass fed ribeye that I seasoned heavily with sea salt and pepper. I let it sit for about 30 minutes. . 2. I heat a pan on high and cooked the steaks for about 3 minutes on each side (go a little longer if you want them more cooked). I’m a medium rare kinda guy. . 3. Lower the heat to medium, then add half a tablespoon butter, 2 cloves garlic, and 1-2 tablespoons thyme to the pan. . 4. Tilt the pan and keep basting the steaks with the oil for about another minute. . 5. Remove your steak from heat, cover with tin foil for about 5-10 minutes, then serve with your favorite sides. I went with broccolini and spinach that I sprinkled with some Parmesan and red chili flakes.

This week has been crazy to say the least. On weeks like these, it’s so nice to have an easy meal that is filling and gives you leftovers. This beef taco vegetable skillet will help you into the wknd. Paleo and whole30! Ingredients for skillet 1lb ground beef 1 large sweet potato, diced 1 zucchini, diced 1 green or red bell pepper, diced 1 small onion, chopped 3 garlic cloves, minced 3 Tbsp olive oil 1 Tbsp taco seasoning Sea salt Pepper 1 jalapeño sliced, optional for topping Chipotle Ranch 1 cup compliant ranch 1 tsp chipotle powder 1 tsp smoked paprika 1 tsp garlic powder 1 tsp onion powder Directions 1. Preheat oven to 400°. Spray sheet pan with compliant nonstick spray and add sweet potatoes. Drizzle 1 Tbsp olive oil and mix to coat. Sprinkle with sea salt and pepper. Cook for 35-40 min. 2. While sweet potatoes are cooking, mix all of the chipotle ranch ingredients in a bowl and chill in fridge until skillet is ready. 3. Heat 1 Tbsp oil in a skillet and add onions. Cook until softened. 4. Add in hamburger, peppers, zucchini, and garlic and cook until hamburger is browned. Drain any grease and return to stove. 5. Mix in taco seasoning. Sweet potatoes should be done at this point, and add them to the skillet. Gently mix them and remove from heat. 6. Drizzle chipotle ranch over top and can add jalapeños, cilantro, or any of your favorite toppings. Easiest dinner known to woMAN 🤙🏼 I threw the salmon in some foil with a bit of olive spread, some dill and some garlic and baked it at 200 for 18 minutes. Then drizzled olive oil over asparagus and green beans and cooked that for 10 minutes. Meanwhile chopped up my favourite salad of all time.. I used mango, avocado, olives, coriander, limes, cress, red onion, cucumber and chillis 🙌🏼 added some rice.. DONE 🥰

I tried this lentil-pea-rice pasta (no flour/ high protein version) 🍝 ! It cooks faster than regular pasta and has a good taste to it. I made pesto sauce 🌿 around 10 days back and it stayed fresh in the top inner rack of the fridge! The pine nuts and olive oil act as a good preserving agent. I added in some ricotta 🧀 and it was a delight. The whole process is a 10 minute work. I’m in this place again....I start to gain some momentum then BOOM! 💥 a seizure comes along to stop it. It started Tuesday I was extremely dizzy and couldn’t even get up to walk. Then Wednesday afternoon 10 mins before I left to pick up kids from school (I walk about a mile) I had a seizure. How am I suppose to do anything with life when this keeps happening? I am not the kind of person that likes to do the same thing everyday and just be at home. I am extremely depressed because of it and my medication which I have to be on until my new anti-seizure meds are at a therapeutic level. I have lost my fight....I don’t know what is next.

Chicken & Vegetable lasagne! Always a winner in our house! To make the sauce: Fry Onion, garlic, & chopped veg. Add tin of chopped tomatoes, tomato purée, basil & smoked paprika. Bubble until veg has softened then stir in cooked chicken. To layer the lasagne, put lasagne sheets in a ovenproof dish, top with meat sauce then more lasagne. Spread with cream cheese then top with more meat sauce and top with mozzarella. Cover in foil and pop in the oven. Having to hit around 2,500 cals- 2,800 cals a day can be tough when eating “healthy”. Most of us have known since an early age how many servings of veggies we were supposed to be eating (thank you food guide pyramid), but up until a few years ago, I never actually ate anywhere close to that amount. 🤷🏼‍♀️ . Now I've discovered how EASY it is to get in the correct number of servings by adding them to almost every meal. 🌶🥕🍅🍆🥒 . Take breakfast for instance- you can throw virtually any veggie or combo of veggies into a pan, quick sauté, add some scrambled eggs, or quick cook runny eggs to add on top, done! If I'm short on time, I'll often take last night's veggies that I cooked, reheat, and make eggs to go with it. ✅ . My go to combos are broccoli or spinach and scrambled eggs, sautéed collards, peppers and onions, or zucchini and squash with runny eggs. Don't forget to season too! Spices are your friend. Smoked paprika, curry powder, garlic, and oregano add immense flavor. 🤤 Don't like eggs? A side of chicken sausage or turkey bacon is a great protein sub. 👌🏻 . 15 minutes to make a breakfast that starts your day right and will give you the energy you need to tackle your morning. 💪🏻 I'm all about it!
