{NEW} Cheesy Jalapeño Avocado Toast 🌶🥑🔥 Jalapeño peppers contain something called capsaicin, an alkaloid that gives peppers that characteristically spicy quality and it is also responsible for many of their health benefits. Jalapeños are low in calories and a good source of fiber, vitamin B6 and vitamin C...and pretty BIG on FLAVOR too! There are many studies and rumors you can find online claiming that Jalapeño peppers may help us to lose weight by boosting our metabolism, and reducing our appetite! Several studies have found that capsaicin and other similar compounds called capsaicinoids can boost metabolism by 4–5% per day, potentially making it easier to lose weight. Now, I suggest that you do your own research and make your own judgment about those claims...as for me...I enjoy jalapeno peppers quite often, and have begun to adding them to my meals more, and more...so the health benefits and weight loss claims...just an added bonus...I'll take it!!!. . . Do you know that much of the actual HEAT from the peppers is found in the seeds, so if you want to tame things down a bit, then I highly recommend removing all those seeds. Yep! These spicy little peppers are actually very good for us! So ENJOY! makes 2-3 servings Ingredients: 4 slices of Ezekiel, or Rye bread 1 small ripe avocado 1 Tbsp lemon juice 1-2 small jalapenos, thinly sliced 10 cherry tomatoes, quartered 3 Tbsps shredded Mexican cheese blend Instructions: Toast your bread until nice and golden, just to your liking. Meanwhile, in a small bowl place the avocado together with a squeeze of fresh lemon juice, and mash it with a fork. Season with sea salt and pepper to your taste. Top toasted bread with mashed avocado mixture, then top it with cherry tomatoes, shredded cheese and jalapeño slices. Broil for 3-4 minutes, or until cheese is melted. Watch it closely! “I ate a brownie once at a party in college. It was intense. It was kind of indescribable, actually. I felt like I was floating. Turns out there wasn't any pot in the brownie. It was just an insanely good brownie.” — Leslie Knope #parksandrec . Knope would approve of these Paleo Hu Chocolate Chunk Salty Caramel Blondies from @eatsbyames (GF, Refined Sugar Free) . Ingredients: . For the Blondie Batter: 👉 1 cup smooth nut butter (almond or cashew butter works best) 👉1 whole egg 👉1/3 cup coconut sugar 👉2 tbsp nut milk (I use unsweetened almond milk) 👉1 tsp vanilla extract 👉1/2 tsp baking powder 👉1/4 tsp salt 👉1/2 cup chopped Hu Chocolate (any flavor) . Salted Caramel Sauce: 👉1/4 cup full fat coconut milk 👉2 tbsp coconut sugar 👉1/4 tsp vanilla extract 👉1/4 tsp salt . Instructions 1️⃣Preheat the oven to 350 degrees. 2️⃣Combine all blondie batter ingredients except for the chocolate chunks in a medium mixing bowl in the order that they are written. Mix well until all ingredients are evenly incorporated. 3️⃣Fold in the Hu chocolate chunks. 🍫Save a small handful of chocolate to press into the top of the batter before baking. 4️⃣Spread the batter evenly on the bottom of a parchment-lined or greased 8x8 baking dish. It should be thick and sticky. If you are having a hard time time, spray a little bit of cooking oil on the back of a spoon to help spread the batter. 5️⃣Press the extra chocolate chunks into the top of the batter. Bake for 22-24 minutes. 6️⃣While the blondies are baking, you can make the salted caramel sauce. In a small saucepan, bring the drizzle ingredients to a boil. Quickly reduce the heat and simmer for 6-7 minutes or until the mixture has thickened to a consistency that is easily "drizzlable." 7️⃣Once the blondies are done baking, let them cool. Got a few things because didn’t know when I’d be back! Got the Soup Mahendra with lentils, cauliflower, and potatoes, the Farm juice with greens, carrot, beet, ginger, and garlic (🤔 yep, you read that right), but the 🌟of my meal was the Sem Sandwich 👌🏼 Toasted whole wheat pita stuffed with hummus, greens, mixed veggies tossed in cilantro-cashew-pesto & cashew cream goji dressing 🤤 and topped with sprouts and vegan walnut ‘parmesan’ SO. GOOD. BRUNCH!!!! The best meal ever🤩I love breakfast foods all time of the day and this one was so delish!! We’re on the road and stopped in Tampa at this california themed restaurant. They had so many healthy options so I got this egg dish. You can’t see but it has tonssss of avocado and the eggs were delish. This morning I started my getting back to running program and i’m super excited to get back into it!! It was basically a walk 3 min run 1 min for 4 intervals + a warmup. My leg felt fine but a little stiff. I’m gonna take a day off and then do the same thing. I really don’t wanna get injured again so I wanna make sure I don’t progress to fast. So I finally put together a Homemade Granola recipe that I just LOVE 💕. I also love that you can switch out or even omit (I’m looking at you, coconut 🥥😕) ingredients commonly used in granola, and control the sugar content. I used unsalted nuts, maple syrup and a small amount of honey 🍯. Hope you guys try this out and enjoy it as much as I do! . . To make: 1 cup dried cherries 1 cup sliced almonds 1 cup pumpkin seeds 1 cup pecans 1 cup sunflower seeds 1 cup walnuts 4 cups rolled oats 1 cup wheat germ 1 cup oat bran 1/2 tsp salt 1/4 cup brown sugar 1/4 cup maple syrup 2 tbsp honey 1 tbsp vanilla extract 1/2 cup vegetable oil 1 tbsp cinnamon 2 tsp ground ginger . Preheat oven to 325F. Line a baking sheet with parchment paper. In a large bowl, combine oats, wheat germ, oat bran, nuts and seeds. In a small saucepan, combine oil, sugars, cinnamon, vanilla, salt, ginger and cook over medium heat until melted and smooth, about 4 minutes. Pour the liquid slowly over the dry ingredients while mixing until coated. In about 3 batches, spread onto the parchment lined baking sheet into one even layer and bake for 25 minutes, giving the mixture a stir about halfway through baking. Cool completely then add dried cherries. Let’s see! 🙃 Salad contains red cabbage, kale, carrots, peanuts, red bell peppers and green onion. We will mix the mandarin oranges later in. How do we grocery shop on a budget while living a mindful, humane existence? Lemme tell ya damn, it ain’t easy. We’ve been keeping a tight budget (30 a week) here lately so spending 7 dollars on non gmo pasture raised eggs at Whole Foods doesn’t fly - really can anyone go and spend less than 40? I’ve spent that much on an impromptu snack run in a blink 😂. Ethical eggs are a priority for me, I couldn’t eat them for YEARS after watching chicken run 😭 ya feel? My best advice- don’t think you need to go to Whole Foods to buy all your “health” food or be conscientious, in reality they’re just another big box store. Do go to budget groceries, shop around and remember to hit up the Natural sections in stores like Kroger, Giant etc cuz you never know what you’ll score. More on this to come!
