Vegetables contain anti-nutrients? Having been conditioned most of my life that vegetables were important for health, I forced myself to include them, spending extra time to find the freshest of the fresh in farmers markets and the grocery stores. Until one day, a year and half into following a ketogenic diet after a spinal cord injury, I discovered research of Dr Georgia Ede and that what I was eating may be the root cause of nerve pain and inflammation. Did you know????
1. Nightshades (potatoes, tomatoes, eggplant, peppers, gogi berries etc) contain glycoalkaloids, which is a natural pesticide within the plant, protecting it from bacteria, fungi and viruses. Glycoalkaloids also block cholinesterase in humans. Cholinesterase breaks down acetylcholine, a neurotransmitter that assists in signaling between nerves and muscles. Nightshades are therefore neurotoxic.
2. Cruciferous vegetables (cabbage, cauliflower, broccoli, brussel sprouts etc) contain sulforaphane, another plant pesticide that kills insects, bacteria and worms, has been shown to damage human mitochondria, producing reactive oxygen species (ROS) that lead to damage to DNA and inflammation.
3. Phytic Acid is found in legumes and grains and has been shown to inhibit nutrient absorption. .
When we consider what would be the "paleo" fruits and vegetables, we must consider also the fruits and vegetables of today are not the fruits and vegetables of our ancient ancestors. The modern day breeding and genetic modification of plant species to become larger and sweeter, which a higher sugar & starch content simply contain much lower nutrient profiles than the wild species of berries and plants the ancient caveman ate.
