This global shitshow has become my favorite backpacking meal.
Japanese Curry + instant barley + Polish sausage + avocado.
Japanese curry is bomb as fuuuuck. I bought a few different kinds in Kyoto, but mostly I just use the S&B Golden Curry brand bricks you can buy in the Asian section of most grocery stores.
What's in it? Wheat flour, palm oil, salt, sugar, MSG, hella chemicals, and some spices. Ima try to DIY this soon, but tbh this shit is delicious, shelf stable, caloric, aka perfect for backpacking.
I sauteed some veggies (carrot, shallot, bell pepper, jalapeno, cabbage) in some olive oil and then added 1 brick of curry / person. Broke them up with my spoon and added enough water to form a sauce. This will thicken as it cooks, so I'll add splashes of water until it's glossy and saucy.
Meanwhile, I boil some @traderjoes 10-minute barley. I love this, there's a farro version too. Heartier than instant rice or pasta with different nutritional benefits, but you could def use instant rice or ramen noodles. I add one packet of @lonolifeinc bone broth for flavor + 10g protein, boil it for 2 minutes, cover it, and let sit for 10.
I grilled a kielbasa over a fire, which makes this meal slightly Polish? You could just as well sautee the sausage with the veggies.
Avocado + Japanese Curry is like pineapple on pizza. Fuck all y'all that shit is a match made in heaven and I'm a professional so my opinion is FACT.
