DAIRY FREE “RANCH” PASTA and CHIPOTLE SHRIMP! Perfect for this rainy day. This pasta was so easy and made with dairy free yogurt and tahini, and the shrimp too like 5 minutes! Ever since I saw @kalememaybe Make ranch pasta I have been craving it. • • Deets: @marinadelreyfoods Shrimp boiled then tossed in chipotle hot sauce and coconut aminos (I used @sietefoods Sauce), avocado and eatbanza pasta with tomatoes and sautéed spinach and this ranch sauce. You know that moment when you go to reach for your favorite container of hummus only to find a very small, lonely dollop pressed up against the side with bizarre imprints in it? Part of you wonders how those alien-like fork marks got in there, and if it’s still safe enough to eat... and the other part of you starts to curse inside your head because you’re convinced there isn’t enough to spread on your sandwich and thus, lunch is forever ruined. 😭 Turns out, there actually is just enough... and, it happens to makes one hell of a stellar dressing.👌💃🌿 Here I have the last little scoop of plain @majesticgarlic hummus (about 1 T) mixed with 1 T coconut aminos, 1/4 lemon and a quick splash of white balsamic (all mixed together inside the container). Then, I massaged it into some kale with 1 tsp. of @chosenfoods avo oil, and added some chickpeas, toasted fennel seeds, creamy avocado, crunchy daikon and a quick drizzle of my favorite @wholefoods dijon on top. 🤤 Savory, creamy, and so. dang. good!! Chilli, Lime Steak Salad Bowl - Here’s some carb free inspiration to keep you motivated this week. This salad bowl was so easy to throw together as most of the ingredients were precooked (in the fridge). It’s really good to make a habit of precooking lots of healthy bits so you don’t reach for junk food when you get hungry. Happy hump day!! ✨✨✨✨ Recipe: Cut 200-250g of steak into strips + add the strips to a bowl + season with salt to taste + cayenne pepper to taste + paprika to taste + 1-3 tbsp of lime juice + add a splash of sunflower oil + mix the seasoning into the strips and leave to marinate for 5-10 minutes + meanwhile rinse and chop 1 red bell pepper and set aside for later + chop 1 onion + Heat a splash of sunflower oil in a pan + add onions + cook for a few minutes + add steak strips + cook for 5-7 minutes on a medium/high heat (or until cooked) + add red peppers and cook for another 3-5 minutes (adjust seasoning if necessary) + Salad: Add chilli, lime steak bites + chop 2 romaine lettuce + chop 1-1/2 cup of baby tomatoes + cook or microwave 3/4 cup of sweetcorn + chop 1 avocado + slice 1/4-1/2 red onion + add 4-5 tbsp of precooked black beans + add a wedge of lime + 2-3 tbsp of sour cream or Greek yoghurt + sprinkle feta cheese on top! ✨✨✨✨ #ahealthynut #healthy #holistichealth #healthyrecipes #nutritious #healthyfoodie #eatwellbewell #befitfoods #eatrealfood #foodblogfeed #mealprep #consciouseating #fitfood #mealplan #weightloss #diet #balance #beef #steak #salad #mealplan #f52 #keto #paleo #healthy #chilli #lime #avocado #carbfree

EASY, on the go plant based lunch idea 🌸 ⁣ Now that the weathers getting nicer, I love to bring pasta salads for lunch! This pesto pasta salad was whipped up on Monday night and will be my lunch until the end of the week! ⁣ ⁣ Do it⁣ 1 box cavatappi @eatbanza ⁣ 1 1/2 zucchini chopped ⁣ 1 pint cherry tomatoes ⁣ ~ 1 cup frozen peas ⁣ 3oz mini mozzarella balls⁣ 3 tbsp EVOO ⁣ 2 tbsp @traderjoes vegan kale cashew pesto ⁣ 1/2 lemon juiced ⁣ Nutritional yeast, salt & pepper⁣ ⁣ Cook pasta and frozen peas (I usually add the peas at the last few min). Rinse with cold water. Chop veggies and set aside. Cut mozzarella balls in half. Let pasta cool a bit then add the rest of the ingredients into a large bowl. Season with salt, pepper and nutritional yeast, enjoy!!

SALMON POWER BOWL. . What do I like more than seltzer? Air fried salmon. This thing comes out so good... I could have it daily. . To make this dish: . 1. I coat a piece of @wholefoods salmon liberally with A.A. borsari seasoning, squeeze half a lemon, and air fried for 18 minutes at 380. . 2.While the salmon was going, I cut a soft boiled egg (I do multiple at a time to use throughout the week... just boil for for about 6.5 minutes, ice bath, and store in fridge). . 3.Grabbed a serving bowl and filled the bottom with a big serving of @josiesorganics power greens, and some French beans I stir fried with hemp hearts. . 4.Put the salmon and egg over the veggies and served with sliced cucumber, some avocado, and not pictured, a tahini lemon dressing. . 5.Devoured with a smile. . Mary Berry has made another appearance tonight, with the Mushroom & Asparagus Risotto from her Quick Cooking book! Decent meal, but only criticism was it needed some Chicken or something to add a portion of Protein... Recipe split by four works out as 221Kcals, but as my sister was so fussy about it, I got a little extra on mine. Counting this as 1 and 1/4 portions at 277Kcals and 11.2g Protein. Need a new dinner idea? I got you covered with this simple dinner idea of red pesto shrimp, lentil pasta with sautéed veggies 🍤
. I love doing seafood on the weekends or as a fresh cooked dinner as it doesn’t meal prep quite as well as other foods. This delicious, healthy recipe is by my good friend, @livevitae (check out his recipe page). What I love about this seafood dinner is it has all the right components for a satisfying meal: ✔️Protein ✔️Carbs ✔️ Veggies ✔️ Easy Quick to Cook ✔️ Nutrient dense ✔️ TASTY AF 🤩 . — Start to finish = 15 minutes Serving 1 (feel free to double) I used frozen shrimp to save some money too. 458 calories Protein 46 Carbs 46 Fat 10 — Ingredients: • 1 cup lentil pasta (I mixed red + green) • 200 grams peeled shrimp / prawns • Handful asparagus • 1 garlic clove - finely sliced • 1 courgette / zucchini • 1/2 tbsp Extra Virgin Olive Oil or avocado oil • 1 tbsp Red Pepper + tomato pesto (quality store bought is totally cool checking for inflammatory fats like canola / veg oil) — How the magic happens: 1: Heat wide saucepan on medium heat with 1/2 the oil 2: Bring a saucepan to boil with water for the pasta. (Add a pinch of salt to stop pasta sticking) 3. Slice the asparagus + courgette at an diagonal in strips. Add to the pan, turn heat up slightly. 4. Add the pasta to boiling water then bring to a gentle simmer. It cooks in 8mins. 5. Once vegetables are lightly brown and nearly cooked through remove to a plate. 6. Add the other 1/2 of oil. Add the prawns to the pan and cook 2 minutes per side. 7. Add the veggies back in and add the pesto. 8. Cook through another 2 minutes. 9. Serve with fresh basil over the top. — This is a delicious meal which is high in both protein and carb. Late post about this week’s mealprep! . . . Shrimps: •Salt&pepper •Dill •4 chopped cloves of garlic •1 bunch of coriander . . . Red potatoes: •Salt&pepper •Dill •Paprika •Cumin •Ground rosemary •Oregano •Basil . . . . Veggies (2 boxes of mushrooms/2 red bell peppers/2 medium white onions): •Salt&pepper •Paprika •Ground onion •Basil •Oregano •Chili powder •Turmeric •Dill •Thyme . . . Start by boiling the brocoli in a pan filled with a little bit of water at low heat. Put the potatoes in the oven at high heat until done. Then, put the other veggies in another pan at medium heat. In the meantime, prepare the shrimps. When done, put them in another pan at high heat until they turn pink. Dinner last night. Pulled clean barbecue chicken with baked potatoes. The chicken I make is so easy in my @instantpotofficial . I put 2 pounds of lean chicken breast, 1 cup of bone broth, salt, pepper and onion powered. I seal pot and cook for 12 minutes on high pressure (if using frozen add 4-5 minutes to pressure time). Seal and let naturally release. Drain liquid from pot and shred chicken with two forks. I added some sautéed veggies last night and my homemade clean bbq sauce. So easy and you can use this kind of chicken in soups, for a protein on a salad, casseroles and chicken salad. Highly recommend. #lesleyslunches #instantpotrecipes

I love when people say I don’t eat enough or my portions are too small. That translates to me as “you don’t eat enough junk”. Changes don’t come overnight nor do they happen with a diet that’s 20% good and 80% bad. You would be amazed at how much volume of healthy food gives you vs high calorie foods. Meal prep doesn’t always mean cook every meal for the week. For me meal prep is stocking up on the goods so they are readily accessible, boiling a ton of rice or baking a ton of potatoes that I can just grab and have ready for whatever my brain comes up with for that current meal. Make small steps to make your life easier when heading to the icebox to grab a bite to eat. My top on the go tips! 💕🏃🏻‍♀️💁🏻‍♀️ Between work, school, and family (not to mention relationships, sleep, and maybe a social life??) my days are always full. However, I ALWAYS prioritize a sweat session and manage to get it done, too 🙌🏼 . . My top tips for squeezing it all in: 1. Pack your bags the night before! I pick my gym clothes, professional clothes, food, and work/school bag the night before so when 5:30 am hits, I am up and out! ☕️🏃🏻‍♀️ 2. Get ready at the gym! This saves me so much time - Plus, my place stayed much cleaner when I’m not getting ready there 🧖🏼‍♀️💁🏻‍♀️ 3. Plan your workouts. 🏋🏻‍♀️ At the start of every week, I know what workouts I’m going to do each day. Of course things change and so will my workouts, but I waste less time aimlessly walking on the treadmill thinking of what I want to workout when it’s already scheduled 💪🏻 . . .
