Deconstructed Cheeseburger Bowls from The Meal Prep Manual- 60 Minute Meals eBook. @themealprepmanual⁣ ⁣ One of my favorite recipes from my 3rd cookbook. It comes together super quickly and it is just a classical American dish in meal prepped form. For the potatoes, it’s not really possible to maintain crispiness unless you reheat them on the stove or in a toaster oven. They’ll still taste great in the microwave, just softer. I like to serve this dish with a side of tomato/vinegar based BBQ sauce for some moisture and extra flavor. It is calorie sparing when compared to ketchup and gets the job done just as well. It’s almost the freakin weekend and I couldn’t be more eggcited 🙆🏼‍♀️🤸‍♀️ Celebrating with a plate date and then dashing out the door to a meeting. Fluffy omelette Friday? I’m HERE for it! 👏🏻❤️ - whatsonmyplate: two egg fluffy ‘unexpected cheddar’ omelette with sautéed spinach & garlicky shrooms 🍳: in a bowl, beat two eggs as you would if you were making scrambled eggs (I prefer not to add any water or milk). Are you stressed out by how much you spend on food? 😅I’ll never forget panicking about not being able to save money when I got my first job, and not knowing why... until I looked at how much I spent on food. . 🥯My first attempt to solve this: Live on free bagels, cereal and protein bars at work. Not good. . 🥗My second attempt to solve this: buy one takeout meal per day ($8 was the cheapest I could find that wasn’t fast food) and eat crackers with peanut butter at home before and after work. Also not ideal. . 🥣My third attempt to solve this: prepping and bringing lunch to work. I wasn’t good at cooking, but it was the only way to nourish myself on a budget that actually made me feel good throughout the day. . 🙏🏼Eventually I figured out batch cooking (meal prep) was the best way to use up all my ingredients and save time while cooking for one! This took me about 6 months to figure out. . 👩🏻‍🍳Four years later, I have the cooking, meal prep and food budgeting thing down. Meal planning tip #2: Have a planned leftover night after a few days of planned meals. It's a nice break for you, and an easy way to clear out the fridge, and save money by not wasting food.⁠ ⁠ If you cook more food that can be eaten at one sitting, you should have a plan for how your family will eat those leftovers, either for other meals, or as part of a leftover night, so you're not wasting food or effort. are you tired of my shirataki noodle posts yet? although they don’t taste quite like regular noodles they have 0g net carbs but 3g fiber so they are filling!! while i do enjoy carbs i usually try to make most of my dinners low carb with a focus on protein and fat. made this thai inspired (emphasis on inspired) dish the other night and it turned out pretty good😋 . . . deets 👉 prepare shirataki noodles by rinsing them, drying them with paper towels, and sautéing them (no oil) in a nonstick pan. Remove from pan and set aside. Heat up 1 teaspoon of sesame oil in the nonstick pan and add 2 cloves minced garlic and 300g chicken breast. Sauté until mostly cooked and set aside. Add broccoli and cook until soft, then set aside. Heat up another teaspoon of sesame oil in the pan and scramble 2 eggs until barely cooked. For the past five days, I challenged myself to eat ONLY fruit and veggies. No, this is not a vegan diet. This is a step beyond. Vegans eat everything except animal products. I was ONLY doing fruit & veggies (no grains, no nuts/seeds/oils, no beans/legumes/peas). I also decided not to do starchy veggies (corn, potatoes, etc.) or avocados. Another simple meal for your enjoyment:) Ingredients 12oz bacon chopped 6 (butterflied) boneless skinless chicken breasts (in order them to cook quicker) Salt and pepper 2 tbsp butter 4 tsp garlic minced 12 ounces frozen spinach 2 cup heavy cream 1 cup grated Parmesan 1 cup crumbled feta Instructions In a large skillet over medium heat, cook the bacon, then chop and set aside, saving the bacon grease of course 😉 Season the chicken with salt and pepper and add to the pan. Cook about 5 minutes per side, until cooked through. Remove to a plate. Add the butter & the garlic and cook 1 minute. Add the spinach and sauté until wilted. Stir in the heavy cream and the parmesan and cook until thickened. Add the bacon back into the sauce and stir to combine. Add the chicken back into the pan and toss to coat. Sprinkle the pan with crumbled feta. Now that I am debt free and have a healthy emergency fund I needed to figure out what my next financial steps will be. So far I’ve come up with this. I’m perfectly fine with renting right now, plus I don’t want to buy a home in Miami considering the insane cost of living. In the meantime though, I want to save for a down payment on a townhouse. I don’t necessarily have a strict timeline on when I want to have this money, I guess I’ll figure that out later. As of now I don’t mind renting since my living expenses are low. I’ll probably open a separate Ally account for this or just put this money in the same account as my emergency fund. I want to start saving for travel! The first two places on my list to visit is Hawaii and Canada! I’m definitely going to one of those places next year! Lastly I’ll be adding $500 a month to retirement for now. That money will go up eventually. At 317lbs I was such an unhappy person. I wore hoodies to everything, I barely had the energy to get out and do the things I wanted to do, and I had serious issues with confidence. I decided it was time for a change. I ran every single day and went on a total crash diet (I was so naive). I ended up losing the weight but being even more unhappy than before, so I gained it all back over the next year. After that I decided to try a different approach. I began to read, and learn about how to make real, lasting, satisfying changes. Putting those things into practice I was able to finally take off, and keep off over 100lbs and change my outlook on life completely! Now I want to help others accomplish their health and fitness goals. I became a personal trainer out of my desire to bring people who may not think they can do it, to a place where they KNOW they can do it. If this is you, or someone you know, reach out. Are you eating enough fat? 🤔🤔⁣ ⁣ Other than being delicious, dietary fats have several important functions in the body. Essential fats, or fats that cannot be made from converting consumed proteins and carbs, are required for survival. They also serve as the basis of many hormones and intracellular chemical messengers. If dietary fats drop too low for too long, your hormones could get seriously f’ed. 😳⁣ ⁣ Lots of nutrition calculators and templates you see out there today might be pushing for a lower fat intake. But eating less than 40g of fat a day could seriously mess up your hormones like your tesstoterone or thyroid function (or even make you completely lose your period, yikes). 🧬⁣ ⁣ If you’re feeling like something is off, you could be under-eating your healthy fats. ⁣ ⁣ Can fat goals be temporarily set low to create a caloric deficit during a fat loss phase? Sure, but just don’t keep them lower than 40g for longer than 6-12 weeks. Or don’t be surprised when your hormone health turns into a disaster. 🥑🍳🧀🥩

Carob sesame cookies! 🍪These are inspired by carob breadsticks which I had in Greece. Breadsticks with sesame seeds are so popular over there, and I can understand why! The sesame seeds give them the best flavour and I love it. The carob breadsticks were really interesting- not sweet and not savoury. I don’t exactly know how to describe them, but they were so yum! These cookies are really similar but are in the form of a cookie, and are paleo and vegan. They feature only 7 ingredients and are really quick to make. They have super clean ingredients and are really healthy and delicious! Recipe below. ❤️😋
