I can’t believe I’m saying it, but this dinner is even better than the cauliflower gnocchi 👏🏻👏🏻 Trader Joe’s did it again with this AMAZING pesto, if you haven’t tried it you need to go get some ASAP 🤪 • SWIPE to see dinner details: Banza pasta, tomato, asparagus, chicken, Trader Joe’s kale cashew basil pesto, and fresh mozzarella 🍅🌱 All you do is cook the asparagus and tomato in a pan with some olive oil/salt/pepper, add the cooked pasta and chicken (I had them prepped already), add your pesto, and then last is the mozzarella! I’m in quite the inspiration rut right now. I have a few recipes saved up from a few weeks ago, but I haven’t created anything new or at least anything new that I’m proud of in the last week. When I get like this I don’t want to set food in the kitchen even to make my standard meals. Last night I told Amy I’d make dinner and then flat out refused to and we went to a restaurant. Today I did the bare minimum of meal prep. A few salads were made, breakfast for prepped ☝️ and a homemade dressing was whizzed up with my hand blender. It felt good to cook without expectation of it becoming a video, a recipe card and then a Pinterest worthy image... food blogging is so much more than just making the food y’all. I’m starting to run social for my dads company and between Mad About Food and that account I feel like I really live online. I’m thankful to do this work and usually my creative fire is stoked by doing it, but lately I just feel blaaahhhh about the whole dang thing. Thank you for being here and being supportive always. You guys rock. Hoping to be back with new and fun recipes once inspiration strikes again. INGREDIENTS: - 2 heads broccoli, cut into florets - Salt, to taste - 1 large egg - ⅓ cup green onion, thinly sliced - 2 cloves garlic, minced - ½ cup shredded cheddar cheese - ¼ teaspoon black pepper PREPARATION: 1. Preheat oven to 400°F (200°C). 2. Place the broccoli florets in a food processor and pulse until fully broken down. 3. Transfer the broccoli to a bowl and sprinkle over a large pinch of the salt. Mix the broccoli to incorporate the salt and let sit for 20 minutes to draw out moisture. 4. Transfer the soaking broccoli to another bowl lined with a large towel. Wrap the towel closed and squeeze so that all of the excess liquid is drained. 5. Transfer the broccoli back into the first bowl used and mix with the egg, garlic, cheddar cheese, green onion, black pepper, and another pinch of salt. 6. Divide the broccoli mixture into 6 even portions, and form into hashbrown shapes on a parchment paper-lined baking sheet. 7. Bake for 20-25 minutes, until the hash browns are soft and just browning around the edges. 8. Let the hash browns cool for about 15 minutes until they have set. 9. Serve with desired dipping sauce. 10. BLUEBERRY STEEL CUT OAT MUFFIN CUPS 🤤 . I had some leftover steel cut oats on hand so I decided to get creative & make some muffin cups for a quick & easy snack option! 😋 . With just a few ingredients, these babies are scrumptiously chewy, bursting with caramelized blueberry flavour & sweetened with a touch of pure vanilla & cinnamon! I hope you love them as much as we do! 💕 . BTW, you can totally swap the bluebs out for your fave berries or other fruit of choice... or dare I say some vegan chocolate chips! 🍪 . 1️⃣INGREDIENTS: 2 & 3/4 cup cooked steel cut oats 1 tsp. pure organic vanilla extract 1 tsp. Ceylon cinnamon & more for topping 1 tsp. baking soda 1/2 cup homemade plant based milk of choice or warm water 1 cup frozen blueberries or other berry or add in of choice . 2️⃣⃣HOW? Preheat oven to 350F & line a muffin tin with liners. Place the oats & other ingredients in a bowl & mix until combined. Fill the muffin liners with the batter & sprinkle some more cinnamon. Meal prep! I usually bring lunch so I don’t blow $8-10 a day on Chickfila or Chipotle. A lot of people are put off with the idea of making batches of meals before hand because they think it takes a lot of time overhead. This right here took me about 5 minutes total prep time. The chicken is seasoned very simply with black pepper, salt, and roasted garlic with a splash of Tapatio for a bit more flavor. Frozen broccoli that was roasted in the same pan as the chicken at 350 deg for 1 hour, flipping the chicken halfway thru. Quinoa salad fresh from Costco. I'm making this yummy beef today with my good friend. Meal prep with friends. Super Easy Slow Cooker Shredded Beef. Mocha Rub by Steph Gaudreau - One of my favorite girl bosses. I modified the ingredients for the roast slightly because I didn't have figs. So good and so easy. FOR THE MOCHA RUB (YOU WILL HAVE EXTRA) 2 tbsp finely ground coffee beans 2 tbsp smoked paprika 1 tbsp black pepper 1 tbsp cocoa powder 1 tsp Aleppo pepper or sweet paprika 1 tsp chili powder 1 tsp ground ginger 1 tsp sea salt FOR THE ROAST: 2 lb beef roast I used grass-fed chuck 1 cup brewed coffee 1 cup beef broth 1/2 an onion chopped Directions: In the pressure cooker. Brown the meat in a few tbsp of coconut oil. Add coffee, broth and onions. Seal. Heat on medium high for 35 minutes. Release pressure. Let the roast sit and cool slightly (15-20 min) Remove and shred. Last official day of the 6 weeks challenge?! 🥺🥳 It’s so bittersweet! At times I felt like this challenge would never end & then other times, like now it seems like we just started! . Funny enough... I struggled today to meet my goals because it was a family day out of town & those days are SOOO easy to lose yourself with local food and snacks! . I tried to plan ahead & ate 2 breakfasts for meals in the morning before we left, but I forgot to grab my oats so I snagged a banana for one of the carbs! (Still was missing one carb portion.) . For lunch, we actually took the kids out with friends to a local bar/restaurant & that was MEGA hard. I had a few nibbles of their French fries and a bite of chicken that fell out of the breeding. But I stayed strong until I got back in the car where I slayed my little salad. (Where I realized I forgot a carb in that tray too!!!🤦🏻‍♀️) . We get home, and for dinner I threw together another salad with chicken & went back to check.... I realized I needed THREE carbs. . I was so angry with myself so I found a solution to help me get it in without being overly stuffed at night and had a whole pomelo that filled three perfect portions up. . I got my sleep in plus some, all my water & NO WOD because we spent the day enjoying it with friends at the beach and fishing. Much needed!!!! . Emotional is an understatement. I did learn SO much during these 6 weeks. I’m so grateful to all of you who did the challenge with me, to everyone who kept supporting me through (especially with my anxiety), to Starboard for literally helping me change my life in the past 20 months & the Good Lord for bringing Tiffany Peltier to us!!!!!!!! You are truly a gift to the World & I’ll never been the same (in the best possible way) thanks to you! ❤️ . One of the best salads I’ve ever tried! Refreshing and absolutely delicious 😁 1/2 Crumbled feta cheese 1/2 English cucumber 1 Can Chickpeas 1 Clove garlic 1/2 Bunch Italian parsley 1/2 Lemon 1/2 Red onion 2 Tomatoes 1 Yellow bell pepper Extra Virgin Olive Oil Oregano Salt 1. Peel and mince garlic. In large bowl, prepare dressing by whisking together garlic, lemon juice, olive oil, oregano, salt, and pepper. 2. Drain and rinse chickpeas. Place on paper towels and pay dry. Add to bowl with dressing and toss to coat. 3. Peel, medium dice, and add onion to bowl. 4. Wash and dry tomatoes, cucumber, and bell pepper. Medium dice tomatoes and cucumber and add to bowl with chickpeas. Seed, medium dice, and add pepper to bowl. 5. Wash and dry parsley. Shave leaves off stems; discard the stems and mince the leaves. Add to bowl. 6. Add feta to bowl and toss salad. 7.
